25.01.2022 Beautiful whole field mushrooms for dinner last night. Sprinkle with Parmesan, salt, pepper and basil leaves. Drizzle with little olive oil and bake in over for 10 min. A great meatless Monday dish! Kel

17.01.2022 That week between Christmas and New Year when you don’t know what day it is and there is no food in the fridge! Answer ... Eggs on Toast kids!

17.01.2022 This about as much meal prepping that I can handle on a Sunday but it’s amazing how versatile a muffin frittata can be in a hectic week. I freeze these in zip lock bags and eat in the car for breakfast on a crazy morningsmash on a piece of toast with avocado and rocket when I don’t have time to cook eggs snack on in the afternoon for a protein based snack that won’t send my blood sugars through the roof throw into a school lunch box to thaw out by lunch time... I could go on! roast 1 cm cube pumpkin til soft, whisk 12 eggs, fresh herbs, salt and pepper and cooled pumpkin, divide into 12 muffin tins add a few pieces of prosciutto and top with feta. Bake in oven for 15 min on medium. Modify recipe to your own taste. Kel

13.01.2022 Happy 2020!! The 2010’s were definitely the decade of wellness. The multi TRILLION dollar industry gave us Quinoa, Kale and fake vegan meat to EAT. Yoga , F45 and cross fit to Do. Kombucha, Keffir, and crystal infused water to DRINK. Mindfulness, meditation and journaling to THINK ABOUT and Social media influences to FOLLOW. But has it made any difference to our health and wellbeing? With obesity levels on the rise and depression and anxiety at record levels.... I Think Not! Maybe in the 2020’s we should just all calm the hell down and just eat real food, whatever and whenever you want. Move your body every day in a way that you love and connect with people not devices. 01.01.2022 My new favourite thing to cook... frittata! Quick, easy and perfect for leftover lunches. I made this one in a cake tin but muffin tins would be perfect too. Great for a snack or lunch with salad. Roast 1 cm cube pumpkin and diced red onion in oven for 15 min. Leave to cool. Whisk 12 eggs, salt, pepper, mixed herbs. Combine and pour into muffin trays or pan. Top with feta. Cook in 180 degree oven for 20 min or til set. Less time needed if using muffin tins.
