21.01.2022 Who used to buy Jacobs Jaffa cakes back in the UK? I have recreated them at British Bakes and they are so yummy. A light sponge with a layer of orange jelly, covered in chocolate.

21.01.2022 Garibaldi biscuits are made with a sweet dough and a layer of currants. The currants resemble squashed flies, hence the nickname "Squashed fly biscuits". The Garibaldi biscuit was named after Giuseppe Garibaldi, an Italian general and leader of the struggle to unify Italy. Garibaldi made a popular visit to South Shields in England in 1854. The biscuit was first manufactured by the Bermondsey biscuit company Peek Freans in 1861 following the recruitment of Jonathan Carr, one of the great biscuit makers of Carlisle. Popular with British consumers as a snack for over 150 years, the Garibaldi biscuit is conventionally consumed with tea or coffee, into which it may be dunked in informal social settings.

04.01.2022 Who remembers Coronation Chicken? Back in the 70s and 80s it seemed to be the staple choice at every Wedding reception. But I love it. My chief tester, husband John had about 4 helpings. Here is the history: Constance Spry, an English food writer and flower arranger, and Rosemary Hume, a chef, both principals of the Cordon Bleu Cookery School in London, are credited with the invention of coronation chicken. Preparing the food for the banquet of the coronation of Queen Elizabeth II in 1953, Spry proposed the recipe of cold chicken, curry cream sauce and dressing that would later become known as coronation chicken.
