20.01.2022 Our latest Limited Release 'Urban Cane 2020 Harvest' is set to launch this Friday 30th October! It was a hard slog crushing 4 tonnes of sugarcane in Sydney, but it has definitely been worth it. We are very proud that we were able to successfully produce an agricole style spirit this far away from the canefields of Queensland. Over the next few days, we will tell you the story of how we produced this spirit in the heart of the city. *Sourcing Our Sugarcane*... After a visit to Queensland to meet our cane farmer Anthony to learn to hand harvest, wash, pack, and send sugarcane, we came back to Sydney full of energy and vigour. We decided that we could successfully handle 1 tonne of cane at a time in our Surry Hills distillery, so we set up dates for Anthony to organise afternoon harvests and transport the cane in a refrigerated truck to Sydney overnight. Each time we received a delivery, we would spend the entire day crushing as fast as we could with our little single stalk cane crushers. We undertook this process 4 times, 1 tonne per delivery. 11.01.2022 'Urban Cane 2020 Harvest' The Process Continues..... *Crushing & Fermenting*... Once the cane had been crushed and after adding some spent husk into the sugarcane juice to enhance the flavour, it was left to ferment with the indigenous yeasts (no commercial yeast was added). We had some really hot days in January, so our wash fermented relatively fast (about 8-9 days). We did not use any temperature control and allowed the ferment to run its own race.
