25.01.2022 Wow!! What a first day Thank you to all who came and bought some treats and supported me in providing healthier sweeties for our community I think the seedy bikkies were the favourite of the day! First to sell out ... I’m learning that there are a lot of varying eating lifestyles among us. Unfortunately, I can’t provide treats that accomodate all of these diets...I am simply making what I make for myself and sharing it. Hopefully at some point in the future I will be able to modify some recipes to allow for specific dietary requirements. This process will obviously be a case of trial and error with taste, consistency and overall success...but something I’m willing to give a go when ready! Light and love to you all



22.01.2022 Hello lovely people Thank you all so much for your interest in and support of my treats! I’m so glad to hear they are being enjoyed I’m getting many questions regarding the sweeteners I use in place of sugar...... I use two sweeteners, rice malt syrup and monk fruit sweetener. I have chosen to not use xylitol anymore as it is not low Fodmap and offers no extra or alternative benefits than monk fruit sweetener. Rice malt syrup is fructose and sucrose free. It only contains glucose molecules in different combinations. Glucose, although attributed with a high GI, is metabolized by every cell in your body, as opposed to fructose which is metabolised by the liver only. Due to its very high glycemic index, it is not appropriate for diabetics. It is however, safe on a low Fodmap eating plan Monk fruit sweetener is 99% erythritol and 1% monk fruit. This is because pure monk fruit sweetener, without added erythritol, is up to 250 times sweeter than sugar, making it unpalatable. It is extracted from the monk fruit and has been used for centuries by monks in Southeast Asia in natural medicines to aid digestion. It does not contain fructose or glucose. It instead derives it’s sweeteners from naturally occurring antioxidants in the monk fruit. It is also low carbohydrate, low calorie, and has a glycemic index of zero! , deeming it safe for diabetics, those on a low carbohydrate eating plan, and those following a low Fodmap diet So then...one may ask ‘why don’t I just use monk fruit sweetener only...?’ In my recipes, rice malt syrup adds to the liquid/wet content that is carefully proportioned to the dry content to achieve the right consistency. 20.01.2022 December/January Update Hello lovely people It’s that time of year again...that crazy month where there’s so much on! ... This year, for me, it feels even crazier after being in lockdown for so long with absolutely nothing on Anyway, To Bakestead news... I will not be trading between Tuesday 22nd December and Tuesday 29th December, so if you’re wanting to purchase... Gluten free Dairy free Sugar free Vegan Low Fodmap Diabetic friendly ...treats for Christmas be sure to do so within the next couple of weeks The menu will have some changes from December 29 when I begin trading again... I will no longer be making: Choc hazelnut slice Choc coconut slice Jammy fingers I will instead, be adding some apricot, lemon/lime based recipes and possibly a new type of bliss ball also For the next 2 weeks (up to the 22nd) I will be offering all orders a $5 credit!! That means whatever your order is you can add $5 worth of any item of your choice...it could be 3 seedy bikkies, 2 cashew tahini bars...anything you like From December 29 there will be certain set days of the week for collection of your treats. My work/life balance will change next year, so I will be cooking on certain days and selling on certain days. I’m not sure which days yet...I will post an update on this once I know I think that’s it for now!! 13.01.2022 Got a Birthday, or other special celebration coming up? Paleo Chocolate Cupcakes Now available!! And as are all my treats...GLUTEN & DAIRY FREE!! (Read on regarding sugar)... These cupcakes are made with coconut flour meaning they are light and fluffy...and use honey to sweeten Vegan, non-paleo option available also... Honey replaced with rice malt syrup Eggs replaced with chia eggs Birthday or other celebration orders only (not part of the main menu). They will be made and sold by the batch of 12. Iced or non-iced options available... 12 non-iced chocolate cupcakes $20 12 iced chocolate cupcakes $25 Both iced and non-iced cupcakes are dusted with monk fruit icing sugar (pic of non-iced cupcakes below are not dusted) THE ICING...(sugar info) I currently only make an icing with organic dark chocolate that does contain sugar, so if you choose to have them iced they will contain a little sugar (only from that in the dark chocolate, not any added by me). If you have a preferred dark chocolate that contains the type of sugar you can have, I am happy to use that one for your order...otherwise, I use Absolute Organic brand dark choc chips or PICO brand dark chocolate I am, however, experimenting with an icing made from monk fruit icing sugar. 11.01.2022 The new Choc Cashew Bliss Balls These will now be 10 teaspoon sized balls for $5. This is better value than 3 tablespoon sized balls for $5 which I was originally making. After further consideration and some very helpful customer feedback, I’ve decided that smaller, bite size balls are much easier to eat and enjoy!! They’re also more appealing to see in lunchboxes ... Thank you to all my lovely customers who assisted in this decision making process

11.01.2022 Ok...we have arrived! Where? At the next stage of production As of next Monday 21st Septemberthere will be full size bars available and a new price list (not dramatically different from the intro phase prices)... I will also be taking specific item orders in addition to offering the ability to purchase a mixture of items that can be bundled into 2 for $5 or 3 for $5 packs (each item is either 2 for $5 or 3 for $5) I’m sticking with my simple approach to pricing I have had such an explosion of customers (with many already coming back a second time ) that I feel it’s time to end the introductory phase and create larger pieces!.. And a more permanent pricing structure But don’t fear They will still be extremely great value! After the greatly appreciated feedback from all you lovely customers I have decided to remove 2 items from the menu: Choc Walnut Brownies and Choc Fudge Brownie Slice These two treats seemed to be the least favourite, with many customers saying they wouldn’t buy them again. I will still make these two items as special orders for those of you who would like to continue purchasing them. They would, however, need to be purchased in larger quantities. 11.01.2022 Week 2 Firstly I want to again convey my wholehearted thanks to all who have come to purchase treats and support my new, local community operation Week 1 was only half a week but WOAH! ... What a dynamite few days...I sold out of a few items and have spent the weekend replenishing those items I’m so happy to be providing such an obviously needed service in our community! So week 2 will operate in the same way. 03.01.2022 Hi all I trust everyone had an enjoyable Christmas My kids and I had a very fulfilling time volunteering our time and energy at the Cockatoo RSL with their annual Christmas lunch...which was yummy! I highly recommend going there for Chrissy lunch next year if you want a good feed and good conversation I have changed my re-opening timeframe...... I will now be re-opening for trade January 11 with the new menu (don’t worry, there will still be the regular faves on there ) Looking forward to seeing you all again soon with yummy, homemade, vegan, gluten free, sugar free, dairy free, diabetic friendly, low Fodmap treats
