20.01.2022 Mid Week Hidden Veggie Bolognese 1 grated zucchini 2 grated carrots... 1 diced onion 500g pork/veal mince (or mince of choice) 1/2 cup red wine 1 cup stock 1 Tbsp tomato paste 1 can crushed tomatoes 1 diced tomato (other veg you need to use up in fridge) Herbs (I use pepper, herb salt, oregano, basil & cinnamon) Pasta to serve (my kids love the high fibre Vetta dinosaur pasta & we tried the pulse pasta)

02.01.2022 Coconut Turkey Mince & Rice Meal Prep Makes 3-4 lunches depending on portion sizes (I’ve doubled the recipe in the prep video for my husband & I- it made him 3 lunches for & 4 for me) 500g Turkey mince... 1 cup basmati rice 1 onion 1 can light coconut milk 1 Tbsp Thai seasoning Dash of Fish sauce Squeeze of lime juice Chilli (if you like) 1 Tbsp reduced salt soy sauce 1 grated carrot 2 handful chopped green beans 1 bag of kale slaw or other veg to go along side mince and rice 1. Cook rice in rice cooker or as desired 2. Chop onion, grate carrot 3. Brown onion, mince and grated carrot in frying pan 4. Add green beans and Thai seasoning 5. Add coconut milk, soy sauce, fish sauce, chilli & lime juice and simmer on low heat for 5 mins. 6. Separate mince into containers along side rice and kale slaw or other veg Your future self will thank you for pre organised lunches!
