Always hot steep leaves first. 1. Steep as normal in a 250ml cup but add 2 teaspoons of tea, once steep has finished pour into a 500ml cup full of ice. Make sure the cup or glass can cope with the hot and cold water. Keep the leaves and place to the side as you can re steep your tea 3 or more times through out the day, or place the steeped tea into a tea infuser with cold water and place in the fridge for up to 24hours but no longer as there are no preservatives in the tea. 2. A hot flush pour hot 100oc water over the leaves/fruit for a few seconds making sure all have been covered with the hot water, then place your tea leaves/fruit into a vessel/bottle with cold water, and continue to steep the leaves/fruit, you can keep this in the fridge for up to 24 hours but remember to drink it in that time as it has no preservatives.
