24.01.2022 Happy Sunday. I hope your day has been filled with as much craziness as ours. This is our actual tractor. The one we use every day. We think it was built by Noah a gazillion years ago but she works - turns on, lifts, pushes and we drags like any good tractor. ... And as a bonus our girls absolutely love it. #masseyferguson



24.01.2022 Hands up those who remember pounding the pavement up the lighthouse only to be greeted by... Goats. So these goats were originally brought to the cape in 1903 after the lighthouse keeper popped and ad in the newspaper for' two nanny goats in kid. The rascal herd grew to over 40 until in 2006 they were all taken away except for one lone escapee... ... Some say it was popped up there by protesters who wanted the goats to stay (go Byron!), I have heard other locals say it was dumped in the same way unwanted roosters are dumped (another day we will diverge here). There are cute stories of the lighthouse keepers loosing tea towels and sheets from their washing line 'anything that flapped in the wind - In the 70's the keepers tried tie-dying but apparently that didn't make a difference - they would eat them anyway! 23.01.2022 Tomorrow is Friday! I have just realised today is Thursday not Friday - sorry to all those people I have been writing emails to today and ... yay I just won a whole days worth of time. I also just realised it’s only 7 Weeks until Christmas. (This thought quickly undid that lovely feeling of extra time)... Next week we start Xmas orders.

21.01.2022 Each week we box up our produce for families all over the place. Some people like the gorgeous @kt_graham choose to pick up from our very dinky farm gate stall (it's an old pig shelter), others pop to one of the two farmers markets we do each week. Some people duck down to the little Newrybar store (the petrol station) and grab something quick from the freezer (they have our bacon in there atm!) ... or pop down to Go Vita Ballina - Serge has been a solid supporter of ours since day 1 and they have fresh every other week as well as lots of frozen goodies, including trails like our really really good (gfdf) pork schnitzels. and then some people have it delivered.... not scary - really easy people! We ship early in the week. It travels via frozen carrier all the way up the Brisbane, down to regional Victoria, out to Canberra and rationality' nsw, into depths of Sydney, as well as just into sunny Byron. Repost @kt_graham .... A carton of eggs, handpicked flowers and a little note from @brookletsprings just made my day. Thank you George. Excited to get cooking this week x



21.01.2022 Compostable packaging. . Finally they are here (well sort of) we are transitioning over the coming months as sizes become available. Oh and chicken goes back on the website tomorrow at midday (it’s going to sell out so maybe set your clocks)

19.01.2022 One of our little adventurers @thefarmatbyronbay. Soo many new little faces running around the paddocks at the moment. We just moved the herd into the front paddock to eat the grass right down before we start the next stage of our pasture improvement program #drillseeder!... Preorder and pick up from our farm (autonomously) or at @byronfarmers (thurs + sat) Or woo hoo @tableunderatree is doing home delivery service from byron farmers market - unreal option for northern rivers locavores who want our chicken, the apples, @debra_allard_cheesie butter and @scratchpatisserie bread, jam from @wattletreecreek and maybe some new season @thenomadickitchen apples delivered. The little petrol service station in Newrybar has our eggs and a tiny freezer of goodies, @govitawholefoods Ballina fair has a good selection too. If you feel like you need to escape the world still then @gaiaretreat reopening next week should do the trick - you get to eat our lovely things on their menu breakfast lunch and dinner. Remember restaurants...? IKR Feels like a long time ago - @threeblueducks are finally back open! This week they have our chicken and pork on the menu as well as goodies to take home in the produce store. @threeblueducks



16.01.2022 Our little ginger ninja - he is a heritage breed Wessex Saddleback x Berkshire piglet born just a few days ago. So we use a silvopasture method of managed grazing for our pigs. - it's a regenerative agricultural method where we push small droves of pigs into overgrown areas and they clear the weeds (!) they mostly eat them and they dig them about as well - disturbing the soil (which unlocks and kick starts the existing dormant seed banks in the ground) and they also ...spread their nutrient dense poop (we supplement their foraged feed with a special certified organic ration we get made up just for us - with loads of biochar, apple cider vinegar, garlic and other trace minerals and goodies). Our aim is to build soils and increase diversity - which they seem to be doing a really a good job of. Once the weeds are gone we can get in and start the next phase of our regen' program. #regenerativeagriculture #regenerativefarming #silvopasture @benny2481

15.01.2022 Bone broth Every week for a while now we make a batch of broth. We do just a 24hr simmer - but if it's being temperamental and needs to go round the merry-go-round again... Then we do that. ... This chicken one is where it started (it was a gut health' thing for me that kicked off a general curiosity) and I'm really happy with it. Its' plain but yummy to drink hot like tea - (i do a big pinch of salt) we add it to most cooking things (a dollop in stir-fry when they get too sticky, or I pop an ice cube of frozen broth into morning smoothies or a we cook rice in it, we blend it with fruit and make ice blocks in summer and jellys in winter. We also do a yummy but super strong flavored beef, or a special chicken with pork which is good in savory + Asian dishes. This is last weeks batch and I'm stoked. #bonebroth

Or in our case - packs the farmers market set up, does the washing/ dishes / floors, send out invoices, reviews a pile of job applicants (position is still open- please apply!) makes the lunches and gets the girls to day care and It’s not even 8am yet..... 14.01.2022 And then there was beef. Our very own grass-fed and finished beef is available online now. Choose pick up from our dinky farm gate stall (image above) or pick up from either Byron and Bangalow weekly Farmers Market, or have it delivered to your door via frozen freight (our freighter leaves tomorrow morning! Lismore, Brisbane, Sydney, Canberra, Melbourne and all the regional towns and centres in between).... We have been busily sprucing the website - making way for our new beef & expanding pork range (hello bacon!) plus our new delivery backend - it’s like #spaceage people where you can selected dates and times and feel super organised. Thanks to everyone for being so patient while we find our feet in this new world. Sooo our chicken is coming back - another week maybe 2 we will have all fresh whole and portions - then our full range of sliders and schnitzel will be back in 3 maybe 4 weeks. See more

14.01.2022 Introducing our wild harvest rangeland goat! This is a rolled breast - perfect for drizzling with olive oil, herbs and garlic - then go low and slow and you’ll be rewarded. ... Ethically sourced from just outside of Tenterfield. It is delicious. Mild in flavour, (a complete polar opposite to our highlander beef which is super beefy) and is great for those who enjoy lamb but I don't enjoy the fatty mouth feel you get (super technical term - but I hope you get what I mean). Depending on the season the goat we source is either a sweet Capretto style which we create delicious centerpiece roasts with (and this where this breast rolled is from). We also source a Chevron style which is larger & leaner & richer in flavour (but still not really gamey) perfect for slow braising and curry creation. - This is us dipping our toes into sourcing good alternatives to main stream farmed proteins - our criteria is that is need to be super nutritious as well as delicious and all about improving environmental outcomes as well as being apart of a good ethical food system. 13.01.2022 Today is a great day. The online store is stocked up with all sorts of goodies. Our weekly cold shipping carrier seems to be finally shipping + carrying the way it should. ... The farmers market is buzzing (we are fresh today so if that’s your things then today is your day in Byron) and I have a page of orders to pop on the stall for autonomous pick up’s. This farming thing is good. (Today for this moment at least). I hope everyone else’s day is good too x @benwyethphoto

12.01.2022 Proper bacon. Made from our simple but delicious salt water brine, topped with juniper berries, fresh sprigs of thyme. Smoked gently for a day over pecan and apple wood chip (which I may have got the girls to collect from our little orchid so they would stop driving me crazy ), then cooled, sliced, portioned and snap frozen.... It’s really good and it’s finally back in stock. #pasturedpork #bacondelivered

09.01.2022 We are one of the family of tenants at @thefarmatbyronbay. It’s an amazing community of farmers, foodies, educators and the like minded. Onsite we raise proteins - pork, beef and chicken in a rotational grazing method, that aims to improve the land as we farm - making it better for the next person, and their next person too. ... We work with the other farmers there too - it really is beautiful community of like minded people. Here is our Perry, picking calendula flowers from the growers plot (thanks Venetia's @good_natured_gardening ) These appear in our 'spring sliders (y'all thought it was carrots - haha - it's flower petals!). From this crew we also source a lot of the herbs + veg that goes in our value adds - parsley, thyme, leeks, celery, carrots and everything in between. Their farming is super seasonal, grown in the ground and centered on an agroecology style (which is super technical but from the outside it looks lots of things grown together and it actually looks more like music - not conventional gardening). They are amazing people, super generous and they are our community xx

08.01.2022 Oh hello there - we thought we had sold out of delicious fresh chicken livers but we found a stash! Just uploaded on our website & we ship tomorrow. Livers from pasture-raised chickens are one of the few non-plant sources of vitamin C. Liver is also really high in vitamin A, certain B's including really high B12's, folate and vitamin D and E. ... We love to keep them frozen and grate small amounts into dinner dishes (pasta/casserole/curry/noodles/budgers/vegebake) as we cook - no one knows the difference :) hehe #flocktoit

Saturday CHICKEN LIVER Pate making. Like many Mamas, my Iron levels have dipped in the 3rd trimester. As well a supplements, I am increasing iron rich foods, as well as vitamin C rich foods to help with absorption. My chicken liver pate is number one on my list. Chicken livers are not only a great source of iron, but also B vitamins (hello 3rd trimester energy) especially B12 (over 3,000% of the RDI!). Vitamin B12 is integral for the the formation of red blood cells and DNA, and promotes healthy brain function. It does contain high levels of vitamin A which worries some pregnant women. Vitamin A is essential for cells to grow and multiply, immune function and vision development. Many women are not getting enough. Most research about vitamin A toxicity isn’t about vitamin A from food sources, but preformed synthetic sources. So consuming it in your diet is the safest way, just don’t over do it when it comes to liver (note that chicken liver contains less vitamin A than beef). 06.01.2022 oh snap... that is not suppose to to happen..... When we first started farming we used an 'day range' model (where you let the chickens out of the ‘tractor’ (our built-by-mog-custom- floorless-opensided-movable-chicken-coop)) during the day to roam about the field) - but we had too many issues with predators (our lovely neighborhood domesticated dogs really like the taste of chicken (actually everything likes the tase of chicken!) and disease control was really tough (the ...local ducks and ibis really liked to mingle with our flock too). We moved to our current model with an everyday move at the start of our second year of farming (so they live in the tractor all the time - they get moved to a new patch of grass every day) and we really haven't looked back. The 'day range' model is great in theory, probably takes better insta-pics and works really well for lots of people - but it didn't work for us - not if we wanted to run on organic inputs + principals and also not go broke. Soo now when the birdies escape through the gaps - we spend the morning scooting them back inside - this week there are a couple of really big eagles flying about - and they really like chicken too. #pasturedpoultry See more
