22.01.2022 Fresh inspo this week from our awesome Community Verge Garden Grilled veg and brown rice, chickpea salad Serves 4 ... Ingredients: A large bowl of leafy greens* (basil, parsley, rocket, baby spinach, kale, red garnet amaranth, mizuna, red giant mustard) cup uncooked brown rice tin of chickpeas handful of cherry tomatoes, halved cup chopped, sundried tomatoes 1 small aubergine capsicum cup Greek yoghurt cup mixed seeds (pumpkin seeds/sunflower seeds/almond slithers) Dressing: olive oil and balsamic vinegar Method: 1. Wash your leafy greens and finely chop. Place in a large, flat dish. 2. Cook rice according to instructions on the packet. Once cooled, mix in with greens. 3. Slice up and salt aubergine: to remove any bitterness. (After about 15min aubergine slices will have ‘sweated’, rinse off salt and lightly pat dry with a paper towel.) 4. In a frying pan, on medium heat, drizzle olive oil and fry up aubergine, once almost cooked, add sliced kale and capsicum (only slightly cook capsicum and kale) 5. Mix the rest of the ingredients into the bowl of leafy greens and add a large dollop of yoghurt in the centre. 6. In a frying pan (no oil needed), lightly toast the seeds until golden brown. 7. Sprinkle over the seeds and drizzle of olive oil and balsamic vinegar (add more dressing and season to taste.) *harvested from Broome Circle community verge garden!

13.01.2022 The Broome CIRCLE Verge garden has been going off with all the amazing rain that we have been having! In particular the New Guinea beans! For some cooking and gardening inspiration check out this recipe from Keira's Kitchen and come join us from 4-6pm in the Garden every Thursday!! Big bean salad Serves 4-6... These New Guinea beans are the biggest beans I’ve seen! They are kind of like a firmer zucchini, making them really versatile to cook with; with their subtle flavour. Grate them, roast them, or fry them up like in this recipe Ingredients: New Guinea Bean (cut the bean into a piece about 10cm in length) cup pearl couscous (cook according to instruction on the packet) red onion, diced 1 tomato block of fetta toasted seeds alfalfa sprouts (or any leafy herb from your garden) Olive oil and Balsamic vinegar Bag of leafy greens Method: 1. Drizzle a little olive oil into a frying pan and on a medium heat, fry up the diced onion. 2. Slice up the new guinea bean into small slices and add to the onion. Fry up until golden brown. 3. Grab a large flat bowl, mix together the greens with cooked pearl couscous. 4. Add sliced tomato, crumble in fetta and toss in alfalfa sprouts/chopped herbs. 5. Toss into the salad the cooked New Guinea Beans and onion. 6. On a frying pan on a medium/low heat (no oil) toast your seeds (sunflower/pumpkin seeds) until golden brown. Sprinkle over the salad. 7. Jordin's family has been a part of this community for thousands of years and continues to care for Country and community to this day. Continuing this legacy has been the main driver for Jordin's contribution to this committee.
