14.01.2022 Looking for ways to incorporate broth into your diet?! Today I am slow cooking lamb ribs in beef broth for dinner tonight. You will need: 1kg-2kgs (depending on size of family) beef or lamb ribs 3 cups of beef broth... 1 can diced tomatoes 2 tbs tomato paste Paprika Splash of ACV Small red onion Smoked paprika Honey Thyme Onion powder Salt Garlic Method: Preheat oven to 180 degrees. Generously cover ribs in salt, pepper, onion powder & herbs and spices. Pour liquid broth into a baking pan and place ribs (fat side up) in the broth. The broth should cover the ribs just enough for the layer of fat to be uncovered (to crisp up later ) Cover the pan with foil to keep the moisture in for a long slow cook. Turn your oven down to 100 degrees and place the ribs in there for 5-6 hours. 45 mins prior to serving make your sauce. Sauce: In a bowl mix tomatoes, paste, 1 tsp of paprika, 1 tsp smoked paprika, splash of apple cider vinegar, chopped onion & garlic and 1 tsps of honey. Remove the foil from the ribs and pour sauce all over ribs. Turn your oven up to 180-200 degrees and bake for a further 20 minutes. You want the sauce to crisp up a little. Serve with your choice of veges for a nutrient dense meal.
