25.01.2022 DOUBLE TAP FOR SOME CHRISTMAS LEFTOVER IDEAS?!?!?! Cos I am going there people! We have some finality on what we can do for Christmas in Sydney, and now because we've all shopped but plans have been altered we are VERY LIKELY to have leftovers sooooo below is my scrumptious recipe for leftover roast veg / sweet potato sausage rolls which you can serve up on Boxing Day and add your own extras from Christmas (ham, roast meat etc ) as you wish. I buy a spelt puff pastry at spec...iality grocers as they don't have it in the big supermarkets but you can do as you wish. You'll love these - so juicy! ROAST SWEET POTATO SAUSAGE ROLLS Vegetarian Makes 12 small sausage rolls or 4 individual 300g cooked sweet potato pieces 1 tablespoon caramelised onion 1x 400g tin (220g cooked) lentils, rinsed and drained 1 teaspoon sweet paprika 1/2 teaspoon dried oregano 1/2 teaspoons ground cumin 2 tablespoons extra virgin olive oil 1/2 cup (54g) rolled oats 2 eggs, 1 for the mix and 1 to brush the pastry 2x 100g sheets puff pastry*, thawed Heat oven to 200C. Place leftover baked sweet potatoes, caramelised onion, lentils, spices, olive oil, oats and 1 egg in a food processor and blitz until uniform texture. Measure half the mixture over the first third of the pastry in a sausage shape and squeeze to make it hold ready to roll the pastry. Roll the pastry over the top and continue rolling to the end. Repeat with other half of mixture and pastry. Slice into 12 small sausage rolls and place on a large baking tray lined with greaseproof paper. Whisk the second egg in a small bowl, the use a pastry brush* to wash the egg on top of each sausage roll. Bake in oven for 40 minutes, cool slightly and serve with a delicious wholesome tomato sauce or just as is!
22.01.2022 The misperception that I hear so often is that a vegetable soup lacks balanced nutrition ie protein carbs and healthy fats, which isn't entirely fair to soup. Rather in fact, soup can actually deliver optimal nutrition and boost lacking nutrients in your day - you just need to consider your ingredients as you would with other meals. This one is a prize example CARROT CHICKPEA AND CAULIFLOWER SOUP which deliver 13.2g protein in a delicious hearty bowl of PLANT BASED WHOLE FOOD...S. It's an easy meal and one you can cook once but enjoy multiple times - eat some, freeze some etc etc - so to me it's one of those no brainer nutritious meals. Remember that protein doesn't always have to be derived from animal sources, plant based whole foods and eating a variety of them throughout the course of your day can provide very adequate sources of protein too. Rather than skipping meals because you're later heading out to more festive ones at this time of year or favouring a liquid dinner, focus on a few simple ingredients on a plate to deliver good nutrition and ensure there are still the foundations there for your health. Plus you'll lower your chances of overeating, experiencing digestive discomfort and a hella hangover if you do have nourishing food in you. I know what I'd prefer! On my plate - juicy avo (obsessed atm - craving avo and salt so much!), haloumi yerrrrrmmmmm, home grown tomatoes oooooh yeaaaaa, my roasted beetroot dip (will post that one on the blog soon) and my home made flat breads which look more like an english muffin but taste equally as awesome. Rather than your typical refined sugar laden chocolate treat I’ve pumped this beauty up with plenty of magnesium from cacao, nuts seeds and @healthycareau Super Magnesium Powder too. J #healthycarepartner #healthyrecipe #chocolate #magnesium MAGNESIUM CHARGED FRUIT AND NUT CHOCOLATE Serves 30 Gluten free : Dairy Free : Vegan 3/4 cup coconut oil 3/4 cup raw cacao powder 2 tablespoons maple syrup 1 teaspoons vanilla extract 2-3 tablespoons Healthy Care Super Magnesium Powder 1 1/2 cups mixed raw nuts - hazelnut, macadamia, almond, pecan 3/4 cup dried fruits - cranberries, sultanas, currants Melt coconut oil over low heat on the stove. Whisk raw cacao powder, maple, vanilla and Healthy Care Super Magnesium Powder into coconut oil. Toss together the nuts and fruits in a bowl. Line a loaf tin with greaseproof paper, pour half the chocolate mixture in, top with half the fruit and nuts and repeat. Place in freezer to set for 2 hours then slice and enjoy! Best stored in the fridge up to 3 weeks.

This recipe is an absolute ripper It’s wholesome, fuelled with plenty of beautiful ingredients, and utterly delicious. I’ve used NEW Dairy Farmers A2 Goodness + Prebiotic Milk for a more traditional smoothie base but with the added benefits of the prebiotic milk (2.5g galacto-oligosaccharides prebiotic per serve) to fuel the good bacteria in the gut as pa...rt of a balanced diet. In a small bowl whisk together ingredients for caramel sauce with a fork. Smear dollops of caramel sauce around two glasses, fill half way with smoothie, sprinkle some walnuts and fill the rest of the glass. Dust with cacao and enjoy.

Mmmmmmmm....This would be one of the best salad recipes I’ve written for a while, to be honest though it’s one of the only ones I’ve written in a while for the blog too! 19.01.2022 WILD BERRY ICE CREAM CAKE as promised !!!!!! A cracker of a festive cake without too much fuss and a recipe that welcomes swaps to suit any dietary requirements. Dairy free ice cream for dairy, gluten free or plain shortbread for ginger biscuits, coconut oil for butter and fresh summer fruits such as mango, and pineapple in place of berries if you so wish! 17.01.2022 I need to get back to meal prep so I can have more lunches like this because I've honestly become such a "don't know where the day went or when/what I ate" recently and I don't feel all that energised as a result. Aiming for a couple of salad mixes, protein rich dip, some cut veg and that'll be it for a small goal this week! 15.01.2022 ONE PAN ITALIAN CHICKPEA BRUSSEL SPROUT AND POTATO BAKE yum yummity yum! One pan bakes are some of the best ways to be resourceful and sustainable in the way you eat, using up whatever is left in the fridge and pantry. We usually have starchy staples like potato or sweet potato in the veggie box, plenty of legumes in the cupboard, bits and pieces of herbs needing to be used or blitzed into a pesto and a great selection of condiments like olives, capers, kraut etc which all br...ing a meal like this to life. You can swap potatoes for sweet, brussels for cabbage, chickpeas for cannellini beans, cheese for nutritional yeast in the recipe and still have a scrumptious one tray meal ready without too much effort and maximum nutrition in no time. 15.01.2022 Let’s have a bit of a trip down food memory lane and talk about time warp foods for just a moment. I’d say my top go tos which take me back are : cheese and gherkins, lemon poppyseed cake, and cous cous. They were all HOT trending foods throughout the 70’s to 90’s and I still love em. TELL ME YOUR TOP 3???? Cous cous, circa 1991-99, is a quick and easy grain to add to your meal (you can buy both white and wholemeal cous cous in the ‘rice’ type variety) and if you’re up for so...me time warping in the kitchen then it’s definitely an ingredient to have in your pantry. I’ve taken my 90’s favourite and re-fashioned it for a more contemporary look with zucchini, broccolini, parsley, edamame and caramelised onion. 14.01.2022 Without sounding like a total #healthwanker I do very much crave a big bowl of greens and you knowwwwww the haloumi on top just makes it all the more juicy hehe. Been loving salads with a dressing of evoo, fresh orange juice and some vinegar recently - so yum especially when with haloumi which is a squidge on on the salty side of life. Haven't written a recipe for this because it's literally just a throw together but ingredients were kale and asparagus which I blanched together, finely sliced cucumber, toasted almonds, mint, coriander, quinoa, the yummo dressing and haloumi to top. It's the most beautiful ebook, substantial salads and sides for any and every occasion. The charred eggplant had me at hello. The food will hook you in but if that's not enough she's a bloody legend too and it's ALWAYS worth supporting such legendary peeps. 10.01.2022 FULLY appreciate that a muffin recipe isn't reinventing the wheel but these really are so delicious - please make them they're divine ORANGE BLUEBERRY RICOTTA MUFFINS - yum yum yum - recipe below! ORANGE BLUEBERRY RICOTTA MUFFINS Makes 8... 1/2 cup maple syrup 1/2 cup extra virgin olive oil/melted butter/coconut oil 3 free range eggs 3/4 cup whole milk ricotta 2 teaspoons finely grated orange zest 1 1/2 cups spelt flour 2 teaspoons baking powder 1 1/2 cups frozen blueberries Heat oven to 180C and grease 8 cup muffin tin. In a mixing bow whisk together maple, evoo, eggs, ricotta and orange zest until creamy. Add flour and baking powder and mix. Spoon half the mix into the muffin tins, top with half the blueberries and repeat (you can fold the blueberries through the mix too but sometimes it turns the whole thing blue - up to you) Bake in oven for 25-30 minutes or until lightly golden and the top springs back as you gently touch it. Cool and enjoy if you can resist - I love these with a good smear of almond butter.

08.01.2022 A snap from 6 years ago when I signed my first big corporate deal, I had been in the industry working for 2 years. I was excited and nervous, dreaming big and so incredibly passionate about what I could do to impact people’s nutrition, health and lives. Guess what? NOTHING HAS CHANGED!!!!! We have beautiful thyme growing in our garden at the moment, it’s incredibly abundant and that’s honestly where the inspiration for this dish came from! Plus my ongoing love of carrots. 06.01.2022 Fritters are a fab way to get more fibre on your plate, not to mention look fancy and delish at the same time. Fibre goes well beyond supporting your bowel motions friends, it reduces your risk of chronic disease, lowers cholesterol, helps feed the good bacteria in your gut to strengthen your immunity, and so much more!!! 06.01.2022 For the nights when you reaaaaallllllyyyyy want some juicy home baked wedges but with an awesome twist go some of my Miso Baked Wedges with Wasabi Guacamole. Oooooh yeaaaaa I also love these with chopped nori or gomaiso or a Japanese seasoning called 'furikake' on top which you can buy in yummy Asian supermarkets (one of my favourite places to hang and have mems of my past living in Tokyo!) however if you want to make a bit of a seaweed gomaiso blend simply toast a ratio of ...1:3 sea salt to sesame seeds in a pan and then crush them with a mortar and pestle or something similar with the chopped nori. 05.01.2022 Yummity yum first of my Spring salads - helloooooooo September! Parsley, mint and sorrel from the garden (woo!), roast pumpkin (I like kent or jap more flavoursome), cauliflower, walnuts, tomatoes, goat cheese (ohhh yeaaaa) and a big squeeze of lemon, sea salt, pepper and a little drizzle of maple cos it's DEEEEELICIOUS on a salad like this one with the bitter greens, creamy goat cheese and citrus. 02.01.2022 DOUBLE TAP IF YOU'D GO A SLICE OF MY FLOURLESS PEAR AND CHOCOLATE CAKE???? Rich, chocolatey, delicious!!!!! I’ve swapped grain based flours for almonds and made the cake deliciously rich with dark chocolate and seasonal winter pears - SCRUMPTIOUS way to eat pears I say!!! Love them!!!! Making this and hopefully a hummingbird cake for the weekend ahead - yerrrrrmmmmm. RECIPE BELOW SWEET FRIENDS! J xo FLOURLESS PEAR CHOCOLATE ALMOND CAKE Serves 6-8... Gluten free : Vegetarian 1/2 cup coconut oil 1/3 cup maple syrup 3 eggs 1 1/2 cups (150g) almond meal 1/3 cup (50g) arrowroot flour 1/4 cup raw cacao powder 100g dark chocolate, grated 4 ripe pears (700g), peeled and cut into quarters Heat oven to 170C. Grease a 20cm round cake tin and line the base. Combine coconut oil, maple syrup and eggs in a mixing bowl and whisk until creamy. Add almond meal, arrowroot, cacao and grated chocolate and mix. Spoon half the mixture into cake tin, layer half the pear pieces and repeat the process. Bake in the middle of the oven for 40-45 minutes. Remove from oven, allow to set for 10-15 minutes in the tin then slice and serve.
