Thanks Esilio for supporting us (and for making us super jealous!) / "Influenced by the eclectic mix of cultures in Glendale, Queens NY, I was looking at what to cook with the first piece of pork from the wonderful people at Bruthen.... Two of the biggest cuisines there - German and the Chinese - inspired this cross between a Schweinshaxe and Ti Pang. To say it was one of the best pork knuckles I have ever eaten is an understatement. Brined overnight, slowly smoked for a few hours, then braised in a master stock in a myriad of spices infused throughout the broth, it was fall apart tender and the pot liquor reduced to a runny syrup. Yep it was all eaten!"

19.01.2022 Amazing! Native consumable grasses having a comeback from near extinction in Gippsland. How good would it be to see these traditional foods become more widely available? "Its very easy to despair. So we try not to use words like lost. We try to use words like found and recovered. And thats what Im looking at. Im looking at recovery.... In future years itll be commonplace because we can grow these grasses on degraded land. I think there are a lot of farmers on marg...inal land now. They want some consistency, and they want reduced costs. Perennial grain is a way to do that... Its time to embrace the history of the country, and with that we will be able to embrace its food.

15.01.2022 One month on and its worth sharing this again, since the East Gippsland fire threat is worse than ever now, and many of you are asking whether we are ok. Fortunately for us we are not in danger from the current fires, though we are extremely anxious for all our friends, customers and industry colleagues in the area. We are in South Gippsland which has plenty of national parkland and state forest of its own, which so far is not under threat. We will, of course, being staying... alert tomorrow, as we try to keep the pigs cool and their wallows full. Stay safe and be smart out there tomorrow, wherever you are.
