01.01.2022 Main Ridge Dairy is an award winning, hand crafted cheesery specialising in goats cheese. It’s been operating as a goat dairy since 2001 and is forever striving to be more and more sustainable. To date they’ve over 5000 indigenous plants to link remnant bush land and creeks to really protect, preserve and improve their 115 acres. ... We’ll be sharing more stories of all our locally made produce so stay tuned! Their Capony is ages for a minimum of 4 months, and this washed curd cheese exhibits a slightly sweet, caramel flavour and a smooth supple texture. E.g. it tasted GREAT! Trust me.... @main_ridge_dairy
