01.01.2022 We’re very excited to launch our new crispy skin Porchetta. One of Italy’s most famous pork dishes, it has every reason to be. Hand-rolled Australian pork belly stuffed with aromatic herbs & garlic. Sous vide slow cooked to perfection for 16 hours. For perfect crackling, salt the skin liberally a day prior and leave uncovered overnight in the refrigerator. The key is to get the skin as dry as possible before going into an oven preheated to 240 C. Cook for 30 mins. Reduce heat to 180 C and cook for, at least, another hour until the skin is just right.
