I'm a qualified chef and own my own restaurant here in Queensland Australia but spent a lot of my life in Thailand and learned to cook authentic Thai cuisine. Full Recipe Below: This popular Thai dish has many English spellings: Pad Kra Pao, Pad Ka Prao, Pad Ka Powetc. But they all point to this same delicious, rustic, spicy st...ir-fry featuring the aroma of holy basil. For a truly classic way to serve this dish, pour it over rice and top with a fried egg! INGREDIENTS: Serves 2-3 5-10 Thai chilies, to taste 5 cloves garlic 1 Spur chilies or other kinds of mild chili pepper, chopped cup long beans, cut into short pieces small onion, diced 300g chicken mince 300g pork mince 1 Tbsp oyster sauce 1 Tbsp soy sauce 2 tsp fish sauce 1 tsp black soy sauce (or dark soy sauce) 2 Tbsp water 1 tsp sugar 1 cup holy basil leaves, loosely packed (see note) Vegetable oil, as needed 2-3 eggs (1 per person) Jasmine rice for serving Prik Nam Pla (condiment for seasoning the egg, optional): Mix together some fish sauce, a squeeze of lime juice, chopped Thai chilies, and chopped garlic. 08.01.2022 Ultimate Volcano Cob Loaf Dip Recipe OMG INGREDIENTS: 1 large cob loaf... 60g butter 4 rashers shortcut bacon, finely chopped 4 green shallots, thinly sliced, plus extra to serve 40g (1/4 cup) plain flour 500ml (2 cups) milk 250g cream cheese, chopped 80g (1 cup) grated cheddar cheese 125g (1/2 cup) sour cream 2 tablespoons sweet chilli sauce METHOD: Step 1 Preheat oven to 180C/160C fan forced. Use a serrated knife to slice the top from the cob loaf. Use your fingers to tear the bread from the inside, leaving a 2cm-thick shell. Cut the inside filling into approximately 3cm pieces and cut the lid into 12 wedges. Step 2 Place the cob on an oven tray. Place the wedges -cut side up - and bread pieces onto a separate oven tray. Spray the cob, wedges and bread with oil. Bake for 10 minutes or until just crisp. Set aside. Step 3 Meanwhile, heat 20g of the butter in a large saucepan over medium heat until foamy. Add the bacon and cook, stirring occasionally, for 5 minutes or until lightly golden. Use a slotted spoon to transfer the bacon to a plate. Set aside. Step 4 Add the remaining butter to the pan and heat until foamy. Add the shallot and cook, stirring, for 2 minutes or until soft. Add the flour and cook, stirring, for 1 minute or until mixture bubbles. Remove the pan from the heat. Gradually add the milk, stirring constantly, until smooth. Return the pan to the heat and cook, stirring constantly, for 2 minutes or until the sauce thickens. Stir in the cream cheese and half the tasty cheese until melted. Stir in most of the bacon, reserving about 2 tablespoons. Step 5 Spoon the cheese mixture into the cob loaf. Stand the bread wedges upright in the mixture, leaning against one another. Sprinkle with the remaining cheese. Bake for 10 minutes, or until the cheese has melted. Step 6 Top the cob with the sour cream. Drizzle with the sweet chilli sauce and sprinkle with the remaining bacon. Serve warm, with the bread croutons for dipping. Take a photo and show us your creation
