24.01.2022 Everyone always asks: What is the best way to store their kitchen tools? The the truth is, a magnet strip. The problem is, they are always such an eye sore. After ages of tinkering and scratchin the old noggin, I think I have finally come up with a solution. (Well skip the mind numbing science behind magnetizing non ferrous precious metals) ... A minimal strip with hidden fasteners designed to compliment your custom order. Simple installation leaves you with a hovering bar that leaves your tools floating in space. Available on website #dinner #chef #13knives @ Melbourne, Victoria, Australia
24.01.2022 My good friend @jack_fang_barber did a bio video on 13 Knives. I am far from feeling comfortable with self promotion but working with Jack was just like catching up with an old friend. Hes always been genuinely interested in seeing his friends succeed and doing anything he can to help and it really shows in this film. Jack runs a small business himself. Hes at a very interesting cross roads somewhere between the ease of conversation while he barbers your hair, his passion for storytelling through video and podcast and his involvement in the rich community we have here in Melbourne. If you fall into any of the categories (which everyone needs a wig trim from time to time) give jack a follow and watch where he is able to take this crazy adventure of his! Also, give the video a whirl. Its in the bio. #community #melbourne #13knives
23.01.2022 Social Distancing Ive been called a lot of things in my life, but never inspirational. Not until my buddy Jack did that bio flick on me and my small business. Its crazy to look back at how invigorated I was just a few months ago and how we all feel today. If you need a pick up, watch the last minute and a half of the IGTV 2 posts back.... And if you have time, (and I know we all do) watch the whole thing. Then pick yourself up and get creative! What are we going to do on the other side? Im stoked to see! #loveyall #fuckcorona #13knives

20.01.2022 Which one is your style? Swipe to see up close shots! The top one is your classic chef shape with a swoop heel for style. Buffalo horn and brass butt & bolster. That butts got some fine curves! -or-... The bottom one is the K-Tip Hunter with the tip clipped for extra speed! Made of water buffalo horn and giraffe bone. Those stormy blues are a mood. But seriously, I’m interested in yalls opinion! What do ya think? #chefknife #kitchenlife #13knives @ Melbourne, Victoria, Australia

17.01.2022 Telling Tales Chapter 1: Two in the Bush. A few years back, I embarked upon a run of 8 paring knives. I had just moved into my new workshop and decided it would be a good crash corse to test out the new space. While cleaning up the profiles I passed the tip of my finger through a gap much narrower than its original width. (There is an older post if you would like to see the damage) This is the blade that nearly granted me early retirement. I decided to keep it as my own. Cha...pter 2: The origins of Skrimshaw. This is an old art form executed by sailors stuck at see. It is done by scratching and carving images into whale bone or in this case giraffe bone. Then squid ink is rubbed into the scratching to highlight contrast. This is called squidding. Chapter 3: Hiro and the Horse. My friend is a very talented artist. He travels the world with his skills. On his last trip I gave him this knife to travel with. He carved a horse skull into the handle. He chose this icon based off of an old Chineses idiom referencing the uselessness of a horses skull. To many people, a knife is nothing more than a weapon. But in the right hands with proper training a knife is actually the most useful tool in history. #respect #friendship #13knives

14.01.2022 If you have been following the story then you know, square holes have been the bane of my existence. Last week, I awoke in the middle of the night with the answer! Lets just say it was a long rest of the night waiting on the hardware store to open and an even longer week putting it through the test. I decided to do a run of oyster shuckers to trial it. Probably the most abused knife for a hidden tang. I ended up designing a 10 part assembly with hidden locking pins, turned s...plit pins and square to round to square holes. Like most things I make, it is probably over engineered but at least I can sleep easy at night knowing its reliable! Check the website for some details shots of the construction. : @betozimmermann
14.01.2022 Its all in the little details for me. The amount of time and money, both in machinery and practice, is unfathomable. I wouldnt be able to do it without the keystones set my my father. Cheers pops! #standingontheshouldersofgiants #13knives : @zimmermann.alberto

09.01.2022 Are you Supersticious? You have probably heard the age old tale that gifting a knife severs the relationship. The common loophole has always been to tape a penny to the blade. The recipient then returns the penny and by doing so, negates the "gift" Well, we dont have pennies in Australia, so Ive done a special round of 13 Coins. Any purchased as a gift will come with a free coin for you to eventually keep for yourself! #treatyourself #coincollecting #13knives

08.01.2022 Im the 3rd generation to use these tools. That brass hammer was my favorite in my grandfathers toolbox growing up and my fathers name is still scratched into most my tools. These would not have been cheap investments for them back in the day. But they were investments in their future, their families, and in me. Every time I fly back, my bags are over weight. Not because I bought a bunch of disposable souvenirs, but because hammers are heavy! ... 05.01.2022 We just spent the last 2 weeks running from bush fires up and down the east coast of Australia. On New Years Eve we finally made it to the refuge point thanks to the brave souls at the @nswrfs We spent the evening watching the fires come over the hills as familys came running for reprieve, many who had lost everything. (I still cant put into words what that night was like...) On New Years Day we caught a small window to escape into 2020 with the most important thing, our... lives. As a small business, we may not comment on politics, but community and our impact on the environment are paramount in our core beliefs. I am only making this post here because I know we share the same beliefs. When the fires clear I will be headed back east to help rebuild. You are more than welcome to come with me. If you cant make the trip, I have contacts you can speak too about other donations. And please remember, every decision you make, has an impact larger than yourself. #wedidthis #wecanfixthis #happynewyear : the @nswrfs risking their lives so we can live the lives we do.

The handle timber is off cut gidgee from an out of business furniture workshop. The brass bits are scraps from a laser cutter and the water buffalo horn is from the Northern Territory. All object designed to last 400+ years. Lifetime guarantee, or as long as Im alive. #reduce #reuse #recycle

03.01.2022 Best In Show! [runner up] Its not all about looks with this one, shes built for speed! A chef in Brisbane purchased one of the kitchen assistants when they first came out. He loved it so much he challenged me to make him a full size version. A little bigger, a little leaner, and a whole lot meaner! I accepted the challenge having as much faith in him as myself.. I forged the blade so thin you could nearly see light through it after I finished the S-Grind. I wouldnt trust a... blade like that in the hands of anyone other than a professional. But Rob held up his end of the bargain and soon started sending me videos of him melting onions across the board at ground breaking speeds! Hes a wizard. 03.01.2022 Old World techniques with a little touch of modern chemistry. As some of you may remember, mid last year I had a mild spin out into believing that I was a luxury goods brand. In the business sense, I do offer a luxury product, not necessarily a necessity. (maybe more of a necessary object in a luxurious form) But according to big city slicker terminology, I was miles off luxury good. This resulted in me posing as an Eastern European man on vacation and going in and out ever...y shop on the Paris End of Collins. It didnt take long to realize Im not a modern day luxury brand... I will stick to what I know, making quality small objects. Personal Adornments are now available on the website. #13knives #luxury #goods : @betozimmermann
03.01.2022 As a small business, my customers mean the world to me. Ive been thinking about what I can do to help yall as we navigate through whatever this is. I think a few things are apparent in how we will operate as we move forward. We will be spending more time at home, cooking for ourselves and our loved ones. We will also need to be vigilant in how and where we spend our money. This is why I have decided to do another run of kitchen assistants. This is the best way I can get you ...a quality knife at the most affordable price! Ive refined the design and have all the material in the workshop to begin the next limited run. Head over to the website to check out the details and book in a spot on the next edition! Link in bio. Fell free to share around or tag someone who needs a decent kitchen knife.
