13.01.2022 Manuka honey is honey extracted from hives where bees collect nectar from Leptospermum shrubs and trees. Leptospermum is a genus of shrubs and small trees in the myrtle family Myrtaceae. Most varieties of the Leptospermum family are endemic to Australia and New South Wales is home to 48 species of Leptospermum. In the Southern Highlands, the location of Budderoo Honey, Lepotspermum Ianigerum is found in abundance throughout the Budderoo National Park and surrounding bushland areas (commonly known as coastal tea tree). Coastal tea tree if the main floral source of the honey produced at Budderoo Honey. To be rated as Australian Manuka Honey, the honey is tested for antibacterial strength and this is determined by the presence of the methylglyoxal compound (MGO).
