03.01.2022 MEET OUR HEAD CHEF, CRAIG Quality Resort Siesta’s Executive Chef Craig Scolyer joined the Jones Hotel Group in 2010. Craig has worked in a broad range of roles, from small intimate cafes and providores to catering functions for up to 6500 corporate guests. His hospitality ‘journey’ commenced at Albury’s Commercial Club then involved a move to Perth where he worked in catering for VIPs including Sir Elton John.... Craig’s ability to work with a diverse group of people - from a small brigade of three to a full kitchen of 30 for an iconic venue such as Oxley’s King River Café to Albury’s highly regarded Star Hotel. Such experience makes him the ideal mentor to the eight apprentice chefs he has assisted develop their own path and passion for food and local produce. A love of the region, an established network of friends and family and a yearning to ‘return home’ with his young family was the catalyst for Craig return to Albury providing the Jones family with the perfect person to head the Bullring and Cantina kitchens.
