22.01.2022 H O N E Y I' M H O M E ! Promised I would share this recipe earlier in the week - super easy we call it honey mustard chicken in our house. ... INGREDIENTS 1kg trimmed chicken thighs 1 x leek sliced into rounds 1 x clove garlic crushed/finely minced 1tblspoon dijon mustard 2tblspoons of honey 1/2 lemon juiced 1tblspoon extra virgin olive oil Sprigs of fresh thyme INSTRUCTIONS Combine the mustard, garlic, honey, juice, thyme & olive oil season with some salt & pepper Coat the chicken with the mustard mixture Line baking dish with baking paper and lay the rounds of leeks across the bottom then lay the chicken over the top. Place into a 180degree oven until chicken is cooked through and browning nicely. *I often use the bbq to cook this with the hood down... 04.01.2022 T H A I B E E F Perfect for this warmer weather - use a whole eye fillet for entertaining, or just use the marinade with your favourite cut of beef for mid-week delicious dinners! INGREDIANTS... 1 whole beef eye fillet (or your cut of choice) coriander & mint roughly chopped 1 garlic clove crushed equal parts soy sauce and lime juice dash of fish sauce tablespoon brown sugar 2 x shallots 1 x chilli - seeds removed finely chopped METHOD Roast for 20mins in a 220degree oven Rest Slice thinly, wrap in foil Refrigerate Marinade can be poured over the chilled fillet up to 6hrs before serving.
