21.01.2022 Absolutely STUN-ning bake on our classic white sourdough loaf this morning. Super fluffy crumb and a deeply golden and thin crust. Props to Muzz (aka @murrieharris) for the beautiful loaf and props to me for tweaking the bake temps. Dream team .

08.01.2022 We've made a small batch of these little spiced honey loaves (dairy free) for Rosh Hashanah, if you celebrate and are in the market for a whole one this weekend shoot us a DM and we'll hook you up! We'll also have a bunch of honey and apple sweets on the bench over the weekend including the Russian honey cake, burnt honey and apple frangipane tart and possibly a Japanese Castella cake (honey sponge with Portuguese origins) if you fancy a sweet treat!

04.01.2022 HALP! We're trying to find a furniture/cabinet maker who can build us a glass/timber pastry display cabinet that we can enclose. We've been seeking quotes for a few weeks and are having no luck! If you know anyone who might be able to help then please ask them to get in touch, we have a decent budget for the job, particularly if turnaround is less than 8 weeks. Thanks brains trust!

03.01.2022 A triumph. Truly. I first had a crack at the medovik torte/Russian honey cake a little over a year ago and was sorely disappointed. It's hung about in the back of my head since then while the busyness of opening and running a bakery (one named for the key ingredient of this recipe no less) took all of my attention and some. I've had another crack at this this week and I'm pretty darn stoked. Made from burnt honey, house soured cream made from @littlebigdairyco and cultures fr...om Green Living (because I'll be damned if I can find sour cream with traceable origins anywhere) and dulce de leche from @gelatomessina (we'll make our own next time but for this brand with its traceable dairy source is truly brilliant). Based a little on the recipe by Michelle Polzine of @20thcenturycafesf and a smattering of recipes written in Russian, Czech and everything in between online. Behold. She sure is a beauty. See more
