25.01.2022 We delivered a couple of jars of Curry Paste to some fence posts yesterday. At one we got a lovely exchange of all this delicious greenery. Can’t wait to turn some of it into a soup. 24.01.2022 Looking for an easy dinner idea this Easter Sunday? This was our lunch. Curried Roast Veggies on a bed of baby spinach and sprinkled with a few crushed walnuts. One of my favourite dishes. I only had potato, sweet potato and carrot to roast. I wish I’d had some beetroot too. You can use whatever ones you like. Cut them into bite size pieces, add a couple of teaspoons of @burtonslanecurrypaste and drizzle with some olive oil. Stir around then place on a baking tray and sprinkl...e with some salt. Put in a moderate oven for about 45mins or until veggies are to your liking. Wash baby spinach and place in serving bowl, add cooked veggies and sprinkle with the walnuts. 23.01.2022 This is Ella’s Curry that she made a couple of weeks ago when it was kids in the kitchen night. Here’s what we did... 1 brown onion diced... 3 tablespoons Burtons Lane Curry Paste 1 x 400 ml tin of coconut milk 3 x 400g tinned chickpeas drained 8 medium size potatoes diced Vegetable stock We fried the brown onion in some olive in a large saucepan until soft. We added the curry paste and stirred through and let it fry for a couple more minutes. We added the chickpeas and coated in the mixture then added the coconut milk and potatoes and then enough stock to just cover the veggies. We brought to the boil then simmered until the potatoes were cooked through. We served it with basmati rice. Because Curry is always better the next day we added the frozen peas when we reheated the leftovers the next day. The family members that don’t like peas weren’t joining us for lunch that day. Sterilise jars, weigh spices, mix spices, measure oil, mix together, stir, stir, pour into jars, seal, put the labels on etc etc. Nothing particularly pretty and the body is feeling it. However when I turn up to the post office and am greeted by someone I haven’t seen in a long with ‘ I LOVE LOVE LOVE your Curry Paste, it’s my most favourite curry of all time, it’s the BEST.’ That definitely makes my heart sing and it’s all worthwhile. 20.01.2022 Believe it or not, not everything at Burtons Lane is about Curry. I had a major craving for fruit cake last week. I’ve kept a recipe off the back of a packet of Sunbeam mixed fruit, for a pumpkin fruit cake. I still had a pumpkin left my Dad had given me that he’d grown, so I used that. Fruit cake instantly takes me back to my Mum’s kitchen and Christmas time. There was always a fruit cake sitting on the island bench that would last a long time. When I was a little girl my g...randfather moved to Adelaide so we only ever saw him a handful of times. He used to send us birthday cards with five or ten dollar notes in them. His hand writing always so unique. The other thing he did was bake a Fruit Cake and send it to us in the mail. I think my Mum always ate most of it. I know the one I’ve made tastes nothing like his but it is reminding me of family as I eat it; and I get to eat most of it too because only one other family member at this house likes to eat it. 17.01.2022 This is my favouriteist (yes I know it’s not a real word) picture of me with my Dad. Feels like a lifetime ago it was taken. Before I had grey hair and before he probably did too. Not long after I’d been for a trip to India. He always wore that terry towelling hat to milk the cows. Can you even still get them? My Dad provided so well for his 6 kids. Above and beyond our needs. He gave us a strong work ethic and always had a listening ear. I always wanted to be like my Dad (I... think I’ve ended up a blend of both, funny that). I loved we could grow up on a farm and go to work with him. Riding on the back of the motor bike with him was always fun. Along with chasing cattle on horse back and listening to my sister scream. Now that I’m a parent I can’t believe how trusting he was of us. He lets the grand kids have more free rein than their parents ever do. He loves helping others in anyway he can and constantly gives. 16.01.2022 This pumpkin soup recipe is inspired from my sister. She’s very much an intuitive cook and rarely uses a recipe. I’m generally the opposite and like to follow instructions. From what she told me I’ve made my own version of her Curried Roast Pumpkin, Ginger and Lime Soup. 1.2kg chunk of Kent Pumpkin cut into pieces 800g of sweet potato cut into pieces 4-5 tablespoons of Curry Paste... Olive Oil 2 leeks sliced 2cm piece of fresh ginger Leaves of 2-3 celery stalks sliced 2 tablespoons (approx) Veggie stock 3 teaspoons powdered beef bone broth Juice of 1 lime Place the pumpkin and sweet potato in a bowl, add the curry paste and some oil and mix through until veggies are coated. Place on baking tray and roast in a moderate oven until tender. Meanwhile on the stove top in a large pot, fry the leek, celery leaves and ginger until done. (My sister used home made chicken broth which she says makes it the best!!! So if you have some use that). Add the veggie stock and bone broth powder and water to the pot. Allow to simmer until the veggies have finished roasting. Remove them from the oven and add to the pot. Add more water until the pumpkin and sweet potato are covered. Add the juice from the lime and the blend together. Apparently a dash of fish sauce would really top it off but I didn’t have any so I just added the lime. I loved the combination, although the ginger gave it a bit of an extra kick the kids didn’t enjoy. Great for our immune systems right now. With the forecast of snow by Friday I think soup is definitely going to be on the menu more. Tell me your favourite soup combos. 14.01.2022 I never really quite know what to do with kale except for a smoothie or soup. I’ve had a bunch all week I’ve wanted to use. Finally today this is the result. CURRIED CAULIFLOWER, CARROT & KALE SOUP. This is what I did. ... 1 brown onion diced 1/2 a head of cauliflower cut into pieces 3 carrots diced 3-4 leaves of kale stalk removed and sliced into thin strips 2 teaspoons of veggie stock 4 tablespoons Curry Paste 1cm of fresh ginger sliced 2 cloves of garlic Olive Oil Place the cauliflower in bowl and add 2 tablespoons of curry paste and some olive oil. Toss around until coated. Place on baking tray and roast in a moderate oven until tender. Meanwhile in a heavy based medium saucepan add some olive oil and heat. Add the onion and fry until translucent. Add garlic and ginger, fry another couple of minutes. Add 2 tablespoons of curry paste (if you want to use only the curry paste on the cauliflower that would be fine. I had some to use up from cooking a batch yesterday. ) Add the carrots, stock and kale. Add water until covered to the consistency you like. Bring to the boil and then simmer until carrots are tender. Once cauliflower are cooked remove from oven and place in blender and blitz for a few seconds until it turns to rice. Add to the saucepan of other veggies. Add more water if required and some salt. I threw in some fresh coriander because I had some. If you like your soups creamy you could add a tin of coconut milk. I preferred not to today. It’s enough to serve 3-4 people. It was the best. 13.01.2022 Desperate times call for desperate measures. I’ve been getting lovely veggie boxes each week from @kurrawongorganics. Now that winter has hit we’ve been getting a bundle of Brussel Sprouts. Only half the family will eat them. I’ve been frying them up in butter and garlic but one particular adult has still smothered them in sauce. So tonight I thought I’d try frying them with our Curry Paste. 08.01.2022 Slow cooker prepping. I never do it the same way twice but sort of follow a general script. The one thing that is consistent is that I fry an onion and celery ( if I have it) in the frypan first and add the Burtons Lane Curry Paste after the onion has softened. Toss around for a couple of minutes then put it in the slow cooker. I brown the chunks of meat also in the frypan before putting them in. After that depends what mood I’m in or what I’m craving to eat. Usually whateve...r veggies are in the house and some red lentils, then plus or minus a tin of diced tomato and a tin of coconut milk. Tonight’s one has both plus potato, carrot, zucchini and some kale (made really small so no one can see it). And enough water to just cover and some salt. Cook on high for 6-8 hours. 07.01.2022 This is my Granny ( my great grandmother). She was born on this day in 1894. Imagine if she’d lived to be 126 years old. So much change has happened in the world since she was born. I think she’s given our family two great gifts (I’m sure there’s more) 1. Living in Australia 2. Some great food recipes. Of course she gave me my grandfather also. I spoke to my Grandma (Granny’s daughter-in-law) yesterday, she’s 94. She told me she first met Granny in 1945 in Bangalore. She oft...en tells us it was Granny’s brain that was behind the success of the ‘Bolst’ curry and condiments business. Grandma has invited the family close by to her to have a meal together today to remember Granny and celebrate the day of her birth. I’m remembering too. 05.01.2022 Well that’s Christmas for 2019 done and we’ll and truly dusted. We’ve done the 3rd vacuum for the day and about the 20th washing up (I think it’s just been continuous). All the kids helped feed the cows this morning. They’re all a shade darker with the amount of dust they’ve been covered in from motorbike riding and there’s been bits of grass/hay all through the house (definitely no issues with anyone getting bogged this year). There was so much food we saved dessert for din...ner time because nobody had any room at lunch time to fit it in. We’ve enjoyed our cherries from Orange and Young and the dried fruit went down a treat thanks @sue_singingmagpieproduce with the addition of some mango from my sister and brother in law from Townsville. A few adults managed to catch a nap. Kids got to see an echidna and some kangaroos and ride the motorbikes some more. I think we only had two stacks. We spent about 20 minutes trying to get a minute wood splinter/sawdust out of another child’s eye. We’ve discovered there’ll be grandchild #19 coming in the new year, well half way through. Bunny got more than just her ‘nails’ covered in nail polish and chocolate put all over the sheets and to top it off one overtired child has gone to bed complaining they haven’t felt loved all day. 01.01.2022 Just finished the last batch of Brinjal Pickle I’m going to cook for this year. Apparently this stuff is better than cocaine (not that I’ve ever tried the stuff). One of my most regular customers drove out of her way today to pick up a kilo jar for Christmas. She said ‘she felt like she was going to her dealer to get her secret stash.’ Her husband has put a limit to her buying. Her response ‘ this is my new addiction, if I could shoot it up I would.’ I don’t think I’d go tha...t far. However in amongst all this I did forget to give one child her breakfast.
