20.01.2022 The workshops have proven popular so I'm opening myself up to private bookings. I've called it Tea Sessions. Relax in the familiar comfort of your own home while I host a Gong fu brew bar. Ever tried a pu-erh? How about a bowl of matcha? In a private tea session you will get the chance and more as you experience boutique teas from across the globe. 17.01.2022 If a tea shop stores it's loose leaf teas in clear glass jars, you know they care more about the aesthetic of their shop than in serving you the best quality tea. Always store tea in opaque containers.

In this workshop you will get to see gong fu cha in action while you taste a variety of top grade teas from around the world. Ever tried a puerh? How about a cup of matcha? Now is your chance. After this experience you will know how to identify both the type and quality of a tea as well as describe its flavour. 10.01.2022 As I continue learning and progressing with this business, I'm assessing the things that have worked and things that haven't and changing and tweaking my services as I go. I've now decided to turn Brew Sessions into a 5 week course.

07.01.2022 Bancha Goishicha is a rare tea from Otoyo Town in Kochi Prefecture, Japan. It is unique in that it undergoes two fermentation processes which helps to give this tea its signature delicate yet refreshingly sour taste. 07.01.2022 Visited the Quacking Frog Teapot Shed this morning to see a collection of over 5000 teapots. There were so many varieties, from fine china to silver to yixing clay. They ranged from the very large to the very tiny and from classic to kitsch so no matter what your preference there is something there to enjoy. My morning was finished off with a delicious cup of tea and jam and cream scones while I chatted to the new owners Ruth and Ray. If you're ever in Boyup Brook give the teapot collection a visit. It's well worth it!

06.01.2022 I see a lot of Japanese style high teas popping up at trendy restaurants and hotels lately. Serving wagashi, matcha and no scones and calling it a high tea because you put the sweets on a stand is like performing Japanese tea ceremony while serving everyone a bowl of earl grey. There are rules and etiquette involved in the tea tradition that has now come to be known as High Tea. If you change those rules is it still an afternoon/high tea? Is sad still sad if you serve Russian caravan?

03.01.2022 Held two small tea tasting workshops today at Capel Library. It proved popular with all the spaces filled quickly and there was lots of enthusiasm and interest from those that attended. I'm so grateful for the opportunity to show others some delicious teas and the best ways to brew them. I hope I can inspire a deeper interest in tea.
