This little cheese is very versatile: its fresh, creamy curd will contrast favourably with the crispy flesh of a slice of pear or the ruffled flake of a finely shaved black truffle - from South Gippsland of course! As a relatively new product release and the first of my cheeses to go to market, this is particularly exciting. Rob Monk farms some pretty special milk from his Fleckvieh herd in the beautiful valley of East Poowong, and I guess that’s what has really caught people’s attention. 03.01.2022 Victoria and her partner Stuart live in a small clearing amidst the forest at Turton’s Creek in South Gippsland. Here they grow a gorgeous selection of flowers as well as stewarding the rest of their land which is protected from development by a bush conservancy covenant. Their Sunrise Organic Flowers can be found in the Prom Coast Food Collective shop on the Open Food Network or you can sign up for a csa (community supported agriculture) share. Chamela is a fresh, lactic cows’ milk cheese with a fine, mousse-like texture and a fresh milky taste that is simple and appealing. Toss the torn or chopped flowers and herbs over the cheese for a dash of garden-fresh colour and flavours. from @butterflyfactory_gippsland and @sunriseorganicflowers available at Prom Coast Food Collective The Chamela: Rob milks a herd of 130 or so Fleckvieh cows once a day in the beautiful valley of Poowong East. The cows eat hay and grass exclusively, no grain is fed. No synthetic fertilisers or pesticides are used on farm and herbicide is spot sprayed on blackberry, thistle and ragwort only. Rachel gently batch pasteurises the milk, then inoculates it with lactic acid bacteria. A couple of hours later, a tiny amount of rennet is added and overnight the milk sets. The following day, the buckets of coagulated milk are ladled into crottin moulds and the whey drains away. The remaining curd is flipped and salted with Olsson’s sel gris on both sides then delivered to the customer the day after that. The posy: Beauty and sustainability go hand in hand at Sunrise Organic Flowers. We’re certified organic and farm gently in a small glade within the covenant protected Mountain Ash, Blackwood and Tree-Fern forest we steward. For this collaboration, Victoria has added heartsease, nasturtium, geranium and yarrow to her flower collection. Each week we will select the best of our edible flowers and bunch them with sprigs of our garden herbs. 01.01.2022 Are you looking for our milk? You may have noticed an absence of Butterfly Factory milk bottles on the shelves of your favourite grocer. This has been due to the fact that that I couldn’t source 1L glass bottles. The earlier bottle I used was Australian made and has since been discontinued. The ‘new’ bottle is made in China and will take several weeks to ship once the boat departs, the ETA is sometime in June. You may also have noticed Tarago Valley Organics milk in 750ml gla...ss bottles in their place. Sophia Jones has been batch pasteurising her family farm’s milk and hand bottling it at Butterfly Factory. This is fresh, organic, local milk too and I am so pleased they are putting it in a bottle. Please give it a try if you haven’t already. This is dairy with provenance and I’m delighted that there’s another single origin milk from our lush part of Gippsland out there for people to drink. For the moment, as bottle returns accumulate, I occasionally do a pre-sold batch for the Prom Coast Food Collective Should you find yourself hankering for some of Rob Monk’s Fleckvieh milk, this is where you might find some.
