Lentil and beetroot salad with ricotta 440g whole baby beets... 400g can lentils Couple Handfuls of baby spinach leaves 1 shallot chopped Mint leaves 1tbsp extra vir olive oil 80g reduced fat ricotta Toss together and divide into 4 servings *replace the ricotta and oil for 100g grill chicken * replace lentils with chick peas if not a fan of the lentils = 295cals per serve Hmmmmm yummy

10.01.2022 Just saw a great recipe on Better Homes and Gardens which I thought you Byrner's would appreciate. And naturally I can't leave enough alone I ALWAYS tweak a salad around so here goes! Follow the recipe but instead of 3 tablespoons of oil (Too heavy handed for me) I'd go a light drizzle instead therefore significantly reducing the calorie content but still keeping the flavour savour !!

(Cook as packet directions) 1 zucchini 125 can corn kernels 1 red capsicum diced 1 tomato diced 1 lemon, rind grated and juiced 2tsps Evoo 2 tsps capers Chopped herb of your choice Mix together with the cooked pasta! * halve mix for 2 serves * 292 cals per serve Enjoy!!
