20.01.2022 I had so many messages from people wanting more healthy recipes after I posted my lunch the other day Here’s a super delicious and nourishing tomato and lentil Dahl with lots of gut healing spices. Makes a nurturing lunch or you can use it as a dip or bulk it up and serve it for dinner with cauliflower rice. 1 carrot grated 1 onion diced finely 2 cups spinach 230g red lentils... 1 tin diced tomatoes (or equivalent in fresh) 1 can coconut milk 2 tspn turmeric 3 cloves garlic chopped finely 2.5cm piece of ginger grated 1 tspn garam masala 1 tspn cumin Fresh coriander to taste Gently fry garlic, ginger and onion in a saucepan with a splash of olive/coconut oil. Add spices and fry until fragrant. Add all other ingredients and bring to the boil, stirring regularly. Pop lid on and simmer for 15-20minutes. And that’s it!! I added a squeeze of fresh lime and extra coriander on top. I also made mine a bit spicy by adding 1/2tspn cayenne pepper. Sooooo yummy!!

19.01.2022 These zucchini fritters/pancakes were the bomb!! Sooo easy and Ebby loves them too. Simply grate 1 cup of zucchini, squeeze the excess moisture out and whisk them together with one egg, 1 TBSPN nutritional yeast flakes, 1/2 tspn garlic powder and a pinch of salt and pepper. Spray a fry pan with olive or coconut oil and gently cook until golden brown on each side. Serve with a delicious salad for a healthy lunch that will keep u full. I’m trying to get back to basics as I kinda lost my mojo when it came to being healthy and looking after myself. I was eating way too much processed crap and am now trying to reset and nourish my body with whole foods and HEAPS of veggies. I’m already starting to feel better within myself, more like the old me!
