24.01.2022 Dario Princic, together with Stanko Radikon and Josko Gravner, is one of the legendary pioneers in low / non-intervention viticulture and winemaking in Friuli wine scene. Located in Collio, few steps away from the Slovenian border, the beautiful vineyards sit on the characteristic soil called ponca, a rich marl and sandstone formation of marine origin. Ribolla gialla is an austere and fascinating grape, harvested after any other varieties (even the reds), gives life to very ...complex wines of formidable tannin structure and complexity. Dario’s style is unique: the grapes are destemmed extremely gently (the destemmer is homemade!) and the raisins are left whole in old wooden fermenters down in the cellar for few days before crashing; this process allows more fruit character to develop along structure. The juice is then left on skins for about a month before going into local wood barrels of acacia and chestnut for ageing. 22.01.2022 Myself , Peter Dredge, Joe Holyman, Willamette Valley in Oregon, a biodynamic vineyard, dry-grown, unsprayed with anything for over a decade, amazing mixed soils over an old ocean bed, and, farmed by good people. Brian wines made in Tasmania but now also through the lens of a foreign place. Gris, Noir, Blanc, a holy trinity. Foot trodden, macerated for a short time to extract just enough of everything, then sent to old, large casks. Left alone. Bottled Mike Bennie This a terrific wine, generous but gentle and part of a very ambitious and beautiful project. 3 parts Pinot noir & 2 parts Pinot Gris from Keeler vineyard + 1 part Pinot blanc from Omero vineyard, all co - macerared/fermented. We are very proud to be the first in Australia to pour it !

20.01.2022 l’Octavin Grenabar 2017 Especially after very challenging vintages like 2013 or most recently 2017 and 2019, it has became quite common for some producers in Jura to source some grapes outside of their region in order to make some more wine to keep going. The grapes here are from Remi Poujol in the Languedoc; Grenabar is a blend of grenache (whole bunch = the stems are left with the berries for the entire 2 weeks maceration) and carignan (direct press = the red grapes are pressed straight away); the two grapes are fermented together in stainless steel tank. This is a wine that Alice from L’Octavin particularly loves to drink , so their Australian importers Sue & Roger and hopefully you at Cafe Paci !

18.01.2022 We love all wild fermented beverage at Cafe Paci! This is a little treat coming from Lucinges on the mountains of Haute-Savoie, France. Brasserie des Voirons was started in 2013 by Christophe and Barbara, who draw on wide and varied experience in the restaurant industry, wine importing, and even ballet. They are committed to using only the highest-quality ingredients and the water sourced from the bowels of Mount Blanc. FRAMBOISE 2019 is a tiny little batch of wild fermented beer made form approx 250 kg of organic barley and 120 kg of fresh local raspberries. Unfiltered and unpasteurised.

17.01.2022 Pantom: Panevino wines in Australia, a story of solidarity and friendship. Panevino is a fantastic wine producer for Sardegna, Italy. In 2015 and 2018 the entire vintage was compromise and very little crop were harvested in 2016 and 2017 as a consequence of extreme climate conditions. Panevino was invited to Australia to make some wine to recoup a vintage. With the precious help of Lucy Margaux and Shobbrook Wines, four wines were made and the all profit from sales will go b...ack to Sardegna. Daniela & Antonio from Cantina Giardino met Olek Bondonio at Rootstock Sydney 2014 and shared lots of joy and adventures all over Australia ( last picture shows a sunny day in Tasmania and a very cold dip ) Cheers all these good memories now that travelling that seems so far away.. well let’s travel through stories and a glass of wine! @ Cafe Paci
