23.01.2022 Ernest met M during a cupping event 6 years ago (we don't think he actually remembers this ). M was very excited to have met one of the legends in the coffee industry - Ernest was the former head roaster of Campos who then went on to start up his own prolific roasting company, Panorama Our shared journey did not really start until we had opened 0.6 and were in search of another Sydney roaster to complement our offering with great coffee beans Naturally, Ernes...t was the first in mind. The relationship between Panorama and 0.6 has deepened since , and we asked him the following: What do you love most about the coffee industry? The camaraderie, empathy and supportive way people did what they could - not only to overcome their own setbacks, but to help others in whatever way they could. It's seemingly very easy to prepare, but there’s a saying - the simpler it is, the harder it is to perfect Our team are still playing with the nuances of every different single O we come across, and enjoying this process of exploration We're preparing tastiness from Kenya, Ethiopia, El Salvador, and beyond We can't decide which is our favourite just yet, and we're not sure if we ever will! Batch brew leaves you with a heavier mouth feel than filter, provides a deeper note in most coffees, and is very convenient when you're on the run Come in for a taste and let us know what you think!

This alternative brewing method has us dripping specialty single origins for up to 4 hours then left fermented overnight, which extracts beautiful flavours that you may not have expected from a cup of coffee A cold drip is less acidic and brings out the naturally sweet and floral notes that can sometimes be masked by other brewing methods. ... 17.01.2022 Upon our first visit to the site, we immediately fell in love with it - the neighbourhood, the space, and even the carpark full of graffiti'd walls We all felt that the site contained so much personality, even before our time in it. A close friend of ours documented the pre-0.6 time and so we wanted to share this with all of you Years of experience working in different suburbs will show you that each suburb truly contains its own character ... We're not just speaking about the people or the landscape; you can simply feel it in the air when you're walking or driving through a neighbourhood These feelings are almost tangible, but can also be hard to explain. We came across this innovative ingredient back in 2017 and promised that one day we'd be adding it to our menu The perfect time came as we were designing our Out of Space collection - we thought nothing would be better than incorporating this awesome combination of mochi & waffle into our featured dessert! The LOST IN SPACE was born... This is definitely more evident in challenging times like COVID Our team not only choose to hold hands and pull through this hard time together, but we have also found so much goodness in many of the other people around us. Danling and Anett started as daily customers since day one, and quickly grew to become close friends with the team. This friendship has blossomed throughout the years and we'v...e become collaborating partners for our COVID services during lock down - they helped pivot our operation towards e-commerce almost immediately, and proved to us that anything can happen when you meet the right people. Shortly after restrictions lifted, Danling and Anett decided to launch their brand and product - ReCo. Their laundry and dishwashing powders are filled in reusable glass containers that will be collected after every use With the mission of removing single-use plastic in our world, their philosophy and vision is truly inspiring and has received accolades from family, friends, a plethora of users, and the media. ReCo's laundry powder is now available for redemption on our loyalty system! Simon is our creative chef who has been pulling together the innovative dishes at 0.6 since day one He is full of experience and talent in Japanese cuisine, and luckily for us, he is able to bring his wealth of knowledge to the cafe landscape During COVID, Simon became the missing piece of our puzzle as we haven't been able to see him - he lives down in the Shire where he's been busy taking care of his other venture (@greenshiso_di...ning ) as well as keeping safe for his young family The lack of time together didn't stop us from thinking about Simon or exploring ideas through the virtual world Our mission is to continue his legacy of coming up with creative offerings for our seasonal menus and ensuring that every dish has that special touch This dish "Finding Simon" is our way to show how much we miss him during this tough time It's especially evident in tough times that you're able to identify and appreciate everyones presence in our small team Order it and enjoy crispy-skin salmon with homemade pineapple sauce (sweet & sour), served with quinoa salad, pineapple jam and lime mayo

15.01.2022 Our team has thoroughly enjoyed this Silverline collection journey with you all, and are invigorated by the warm reception and feedback that it has received By now you must have noticed the coloured borders that we've adopted on our social feeds - as we begin our last colour (violet), we want to take a moment to reflect on what each colour has represented for us "White" provided a beginning; and just as it began our Silverline journey, it reminded us of where we've been a...nd how far we have come since that time "Pink" revealed passion; passion that has fuelled our evolving story, and passion that keeps us striving for the best for ourselves each and every day "Brown" helped to ground us - it symbolised our family and roots, as they are fundamental pillars to our successes and strengths We then moved to "Green", which illustrated growth and reflection; both of which we've had a lot of time for during the challenges of this year and COVID-19 We close the Silverline with "Violet"; to embody hope for a brighter future We've all been challenged in many different ways in 2020, and we want to close out the year with a sense of optimism, relief, and hope. 12.01.2022 Seeing our cloud and calendar installation each day makes us look back at our 0.6 journey - not only the wild journey of 2020, but our lives since we opened in 2017 It's hard to believe that our cafe is already 3 years old! How times flies... Regardless of the circumstances, we strive to fill each day with passion, learning, and most importantly - fun and laughter Our team has truly grown to be a family, and the familiar faces that join us each day make our hearts smile. We’ve created the Silverline collection as a dedication to 'our' historical moments Sydneysiders have been grateful and can consider ourselves lucky to be seeing this light earlier than others ... Since day one, our team have always believed that eventually this will be over, and we’ll get to look back at this reminiscence of ours and be proud of every lesson we have learnt through this year We can’t wait for that day. Pouring our hot homemade pandan sauce over the chocolate dome will reveal our VG/GF pancakes bedded with Messina's Pandan & Coconut sorbet, fresh longan, blueberries, pomegranate, caramelised banana, and coconut flakes Just as this year has revealed hidden lessons and beauty for all of us, you're meant t...o melt away the chocolate to reveal something wonderful underneath A silver lining. 09.01.2022 We first came across these cute baby pineapples in the Spring of 2018, and we immediately knew we had to make a dessert with them! This prompted the La La Land - a light and refreshing dish that we named in homage to the film. Our team really connected with the "follow your dreams" messaging of the movie, as it is what we are doing here every day. When we saw it during the lockdown, we felt super happy & hopeful and knew that we must share this joy and dish with all of ...you once again! (Weekends only!) The baby pineapple is not available every year and very difficult to get our hands on. This being said, due to the border closures between NSW and Queensland, we are unable to source more baby pineapples Our La La Land will only be available until we run out of them, so get in to enjoy it soon before it's gone again See more

If you have ever been to the famous Niji sushi restaurant in Kingsford, you'll know that Simon was the humble head chef who ran its kitchen for 3 years During this time, he got his daily soy latte from his local cafe, Brewing Now - this is where Michelle and Simon first met each other. In 2016, Simon left Niji and stepped into an exciting new chapter of his life with opening his own Japanese Restaurant in Cronulla - @greenshiso_dining... By an interesting twist of fate, Simon engaged with @viestudio to design his new brand As M visited the site with Sheila and Alex, Simon recognised M straight away as his ex coffee-maker and this is where one thing led to another... From the beginning, Simon has dedicated his knowledge and skills towards overseeing our kitchen operations and merging his experience in Japanese cuisine into the cafe scene His resume and accolades are very impressive, and we're thankful that he shares our passion and works closely with us to realise our culinary dreams See more

Our team had always 'planned' to turn the little room behind our cafe into what we now call the 'Creative Space' , and Typoflora was definitely the fertiliser that helped our little seed grow into a space that we now share with many other talents and d...esigner brands We're thankful for the inspiration and energy that she gives our team whenever we collaborate. Here's our story Humans are often attracted to things that are unknown or different to us, which makes life interesting It sparks curiosity and strikes excitement because it’s refreshingly different from our normal routines In our own lives,... we notice similar traits that we share with other people, but also differences between us This concept of living in parallel worlds not only triggers our minds to think about what’s happening in our lives, but also the lives of people on opposite sides of the world Although we are in different locations, we find ways to complement and connect with each other, regardless of our different seasons, cultures, cuisines, and experiences This concept will be the central theme for both V by Vie (@vbyvie) and Cafe 0.6 for the year 2021 Across the cafe, retail space, and even our design direction and choice of menu, we want customers to be transported into a realm of being here but there in our parallel world. 01.01.2022 Using minimal line work and subtle splashes of colour, this ceiling installation highlights our concept of a silver lining #thesilverline06 that in every gloomy situation we can always keep moving forward towards our better tomorrow. The overarching idea behind each artwork is activities or items that kept our team going through these tough times. Examples being our hobbies, pets, or even spending time reconnecting with nature - all have helped us get through thes...e dark times. What really drives us forward, however, is our hope and passion to continue to bring good food and inspiration to our community The installation was hung above our dining area in hopes that patrons will take the time to explore each individual artwork and find something that, upon reflection, resonates within them and has also kept them going during these unpredictable times. 01.01.2022 We wanted to 'Spring' some good news on you this season (awful pun intended ) and so we've brought back the HIGH ON MATCHA! Reflecting back on our cafe, we believe that this 0.6 classic dessert is one of our greatest achievements (so far!). Made with our in-house matcha cakes, black sesame ice cream, fresh fruit (only available in mango season) and granola It's now available every day, and the fun isn't stopping here - keep your eyes peeled for more of your favourites to make a grand return to our menu!
