12.01.2022 Our newest bar has actually been in the making for a few years. Sometimes a long time elapses between the initial idea and the finished bar. When we first heard about the @voyager_craft_malt guys a while ago, we decided we just had to make a malted dark milk bar. Seeing that we start with cocoa beans for our chocolate, we felt using craft malted barley from the NSW Riverina was the only way to make this bar. We use a blend of the Voyager guys Atlas and Veloria malts and ...find the flavours complement the cocoa from the Solomon Islands extremely well. Thanks so much for working with us on this, Stu. Were stoked to finally share this bar with you. You can order it from our web site and youll soon also find it at your favourite Cailo Chocolate retailers. Restrictions are lifting in WA this weekend and Poynter Farmers Market Duncraig is back next Saturday June 13. During the past ISO weeks we have been working on new bars, refined our drinking chocolate receipe and have cautiously ventured out from time to time to visit the few Farmers Markets who continued operating. We loved Perth City Farm and are so happy to announce that we will bring our chocolates to the Markets and Festivals at Perth City Farm on June 20.

04.01.2022 Most of us don’t just buy single origin wine (e.g. red wine from Australia). We buy a Cabernet Sauvignon from Margaret River, a Pinot Noir from the Yarra Valley or a Shiraz from McLaren Vale. And many of us appreciate that there can be significant differences in flavor depending on grape genetics and terroir. Often vineyards that are only a short distance apart produce remarkably different wines. Cacao is no different. Case in point: Solomon Islands. An archipelago wit...h many islands. The beans in this picture are both grown on the island of Makira. As you can see, they look quite different. The different appearance can be due to genetics and microclimate, but also post-harvest processing. Unsurprisingly, these beans also taste quite different. This is why we don’t have Single Origin Solomon Islands or Single Origin Panama chocolate bars. Designating the country of origin is a misleading generalization in our opinion. We want to celebrate the diversity found in each country. So the next time you see a single origin chocolate bar in store, please consider what the maker (or melter) is trying to communicate with that term? What is their intention? To celebrate diversity or to just move more product by using a trendy phrase? See more

01.01.2022 We are at Poynter Farmers' Market Duncraig tomorrow from 9am-12pm. To attend was a decision that we didn't make lightly as of course we are concerned about Covid19. Today the Federal government has made an announcement and has ruled that Farmer's market's are an "essential service" and that "they are providing people with access to food in the same way as a supermarket". The organisers of Poynter Farmers' Market Duncraig and the stallholders will take every measure possible ...to keep a safe environment. Unfortunately, tastings won't be available tomorrow. We all know that eating fresh food is crucial to keep healthy and the Farmer's market is probably one of the safest place to get your essentials like fruit, vegetables, bread, teas, spices and chocolate! Tomorrow we will have Wilarak chocolate spread on offer and our bars, including a fresh batch of OORAY, the delicious Davidson's Plum bar. Ooray (also know as Davidson's Plum) is native to the coastal rainforests of Australia's east coast.
