17.01.2022 Lamb ribs are in store now, they are so tasty and so easy to do. Pit at 250f, lamb ribs kept as whole racks and rubbed in your favourite rub, we used Greenwoods Treebark. they were cooked until the ribs reached an internal temp of 203f, then taken off the smoker, wrapped in foil for 45mins and rested in a warm esky. After the rest they were put back onto the smoker and glazed twice over 10mins with Swamp boys BBQ Sauce then cut into individual ribs and served immediately. But... be quick, there are limited stocks on lamb ribs this week.
