Three Little Pigs Touch of Cherry Rub and Australian Cherry wood chunks only available in store @ Cairns BBQ Company Directions for Pig Candy Bacon 1. Preheat the smoker to 300 - 325 degrees F. Add your smoking wood of Choice- we prefer cherry. 2. Line a baking tray with a sheet of baking paper (saves mess) Place a baking or cooling rack atop the lined baking sheet and lay the bacon side-by-side on the cooling rack. We use strea...ky Bacon. 3. Sprinkle Three Little Pigs Touch of Cherry BBQ Rub onto the bacon, pressing it into the bacon to be sure it adheres. 4. Bake for 8 minutes, or until very light brown. Take the bacon out of the smoker and brush the top side of the bacon with maple syrup. Return to the oven to bake for an additional 2-3 minutes. After the 3-minute mark, flip the bacon over, and sprinkle the bacon with the Three Little Pigs Touch of Cherry BBQ Rub. 5. Return to the smoker and bake for an additional 10 minutes. Brush the top side with maple syrup and bake for an additional 2-3 minutes. 6. Allow the bacon to reach room temperature, until it’s cool enough to handle and then transfer the bacon to a sheet of parchment or a plate. Place the bacon in the fridge until you’re ready to serve. 01.01.2022 Lamb ribs are in store now, they are so tasty and so easy to do. Pit at 250f, lamb ribs kept as whole racks and rubbed in your favourite rub, we used Greenwoods Treebark. they were cooked until the ribs reached an internal temp of 203f, then taken off the smoker, wrapped in foil for 45mins and rested in a warm esky. After the rest they were put back onto the smoker and glazed twice over 10mins with Swamp boys BBQ Sauce then cut into individual ribs and served immediately. But... be quick, there are limited stocks on lamb ribs this week.
