25.01.2022 Throwback Thursday... Oh how I miss making wedding cakes, in particular fondant wedding cakes. This one was for our good friends we met in Townsville and was a variation of a navy blue design I had made previously. The bird toppers were made to match the wedding invitations. 25.01.2022 Tuesday Tip Fondant vs. Royal Icing and why cookies aren't as cheap as we wish they were! Cookies can be a bit deceiving when ordering. Because they look small we automatically think they should be cheaper than say a cupcake. This is not the case though when you take into consideration the time factor to make the cookies. I'll give you a little break down on the process from start to finish...... Weigh ingredients Mix into dough Chill Roll out, cut to shape and chill again if needed Bake Cool Decorate Add decorations such as painting, sprinkles etc. Leave to dry Package On top of the time, ingredients and packaging costs need to be added. If you have a strict budget to stick to, then I suggest opting for a cookie covered in royal icing because generally they're a bit quicker to decorate. Pic 1: covered in marbled fondant and hand drawn with edible markers. Pic 2: free hand piped with royal icing, left to dry for 8 hours minimum, hand painted with lustres and left to dry again before packaging. I hope this little bit of inside info helps to understand when you are looking to order personalised cookies in the future. 22.01.2022 Who makes the cake decorators birthday cakes? Well for me this year it was a number of cafes around the Redcliffe Peninsula that provide gluten, dairy and egg free options. My awesome hubby did a drive around and came up with this platter of 7 different sweet treats. 21.01.2022 Absolutely nowhere for baking now! Tomorrow the new kitchen will be installed over 3 days. Then we wait for the bench, tiles and floors to be fitted/finished a couple of weeks later. For now we are pretty much living in our caravan in the back yard. Im so excited to see it come together and to find out if my kitchen designing skills are any good

21.01.2022 *Not my cake Weddings the Covid way... I stumbled upon this picture somewhere on FB last week and it got me thinking about the way forward for my business of providing wedding cakes to venues. ... This is quite a clever way of getting around the issue of not displaying a wedding cake due to the risk of it being contaminated (although Im pretty sure people dont go up and touch/breathe on the cake anyway) but the reflection would show up in everyones photos. I think perhaps having a roped section with a 1.5m distance around the cake could be an option Anyone else have any bright ideas?!

Each and every photo I get gives me such a warm feeling and I just love seeing their smiles and enthusiasm during what is a pretty hard time for many families. 17.01.2022 Fruit cakes are in! I will have a few of the mini cakes available to purchase so watch this space if you'd love to have a try of my homemade fruit cake. The fruit is soaked for 2-3 days and baked long and slow for a mouth watering cake full of flavour and moisture. More details will be available in the next few days

17.01.2022 Tuesday Tip If you love to cook or bake and want to make it more than just your hobby then I suggest contacting your local council for further information. This is where you will find out about all of the rules and regulations that are required to gain a kitchen license in order to be able to sell to the public. At first it does feel a bit daunting but its the best place to go to get the correct facts and to ensure you are following the correct health and safety procedures. Thanks to Moreton Bay Regional Council for waiving the annual few for 2021 due to Covid-19 and its effects on small businesses. This means as soon as my renovation is complete I can start selling to the public again. Happy days

17.01.2022 Tuesday Tip Never stop learning! I have been baking ever since I can remember. I started out just baking packet mix cakes then went on to study Patisserie at Tafe followed by working as a pastry chef for approximately 6 years and then as a cake decorator for the past 6 years or so and Im STILL learning... Ive always made chocolate ganache using chocolate and cream until recently I came across an issue with my local council not allowing my home based business to use fresh cream. I did some research and asked around to find a way to get past this hurdle and thankfully learnt that ganache can be made just as easily using chocolate and water. Who would have known? Lots of people apparently

16.01.2022 Lockdown 3.0 party aka Happy 21st Tommy! My brother turned 21 last year and missed out on a party due to covid. We decided to throw him a little party when he visited this year but again, covid had other plans We did however still manage some delicious food, drinks and of course cupcakes made by the one and only me and Daphne ... She helped weigh out the ingredients, mix, line the tin with papers and then piped with buttercream and topped with sprinkles A last minute hard lockdown isn't ideal and it is ok to feel frustrated, sad or disappointed for whatever the lockdown means to you. I do hope though that you can try and find some joy in something small this weekend Edit: if you haven't been to @raw&peace in Margate yet, I highly recommend you do! Great service, quality and divine products

15.01.2022 Last but not least... This was the last set of cookies that came out of my kitchen last week. The brief was Paris or anything pretty. Unfortunately time wasnt on my side for Paris so I went with pretty. Fortunately they turned out to be just that. The photo doesnt really do them justice. They were embossed with a lace print and Rose flowers, painted in a water colour finish and the edges has a thin rim of gold paint to finish them off.

14.01.2022 Tuesday Tip Decorator vs. Designer You may have noticed that I describe myself as a cake designer and decorator. You may have also wondered what the difference is? ... Well to me a cake decorator is anyone who has the skills to decorate a cake using various mediums such as buttercream, ganache or fondant. A cake designer is someone who designs the cake before even starting to decorate the cake. They are the ones who create the vision by pulling inspiration from different sources. What does this have to do with me you may be thinking? When you come to me with a cake request, I will ask you if you have any ideas of what you want. Do you have a particular style of cake you want or do you have images to show. I will then take those ideas and pictures to create something to suit your brief whilst incorporating my own creative style. This is where my creative heart feels full and content Below are a couple of cakes I've designed by incorporating customers ideas and my own skill set and style.

Little did she kown that Ive been posting many cookies down that way recently and was over the moon when I told her this. ... 09.01.2022 Can you spot the difference that 5 years in cake decorating makes? Back when I made this cake the standard tier height was 4". This has grown significantly and now is considered to be low, the standard is more 6" but most popular is a 7-8" or a double barrel. When speaking with your cake decorator to design your cake, be sure to confirm the height as well as circumference of your cake so youre not disappointed and that you get the right amount of cake that you need. ... 07.01.2022 I promised a few pics of this beautiful resort were staying at and here they are. We woke super early (thanks Beau ) so went for breaky at an absolutely amazing gluten free and vegan cafe right next door called Marie Anitas Gluten Free Cafe & Bakery. I couldnt believe the variety in the menu and that I could choose pretty much anything from it! We then strolled across to the beach where we jumped in the waves and burnt off some energy before heading back for a swim ...in the many pools and a play at the Splash Zone. This afternoon after a little nanna nap we will head for another swim, bite to eat at the cafe or maybe have a bbq. It really is perfect for a family getaway!

05.01.2022 Today I attended my first MIB. international Networking event North Lakes Hotel where the focus was on how to successfully use Instagram. I had my little man with me so I didnt quite get to learn as much as I could but I did meet some other mums in business and this particular one stood out to me so I thought Id share. Tactical Stubby Coolers are a small business that makes these defence style stubby holders. How cute are they? They also donate $5 from every stubby cooler ...to Legacy Australia who support veterans and their families struggling with mental illness. What an awesome idea! 04.01.2022 Throwback Thursday to way back before I opened my business and I made these cute little Blackhawk Helicopter cake balls for my hubby to take to work to share. When we met he was serving in The Australian Army and we were posted to Townsville for 6 years. My husband and his work colleagues got to taste all of my "scraps" when I was still in the process of building my cake flavour list in preparation for opening a business.

03.01.2022 Kitchen reveal on hold We are down to the last leg of our kitchen renovation which was supposed to be finished yesterday but due to some issues out of my hands weve been set back a week. Monday I felt very frustrated as I was hoping to be able to get back in by today, start cleaning and organizing all of our stuff back into the cupboards. ... But in the big scheme of things and whats happening around the world right now, I still consider myself lucky to be able to wait it out and get back up and running in due time. 01.01.2022 Tyler & Bens engagement. First of all congratulations to the happy couple on celebrating their engagement party yesterday. I hope the rain held off for long enough This cake was a modified version of one I did about 5 years ago in Townsville. I get so excited and honoured when someone comes to me and asks me to make one of my cake designs It's such a great feeling when someone notices your work and appreciates it enough to want it as their own. This cake was a smaller ...scale so I made a few changes to the design so as to not make it feel too bottom heavy. The colour is a bit darker also as I was unable to source the same colour lustres as I used back then but I think the deeper rust colour works well for an Autumn cake. What do you think, did I "nailed it" my own cake? Thanks to @redraku for trusting me with the cake design. 01.01.2022 I just wanted to give a shout out to this cute little coffee shop I've found around the corner from my house and daughter's school (dangerous, I know!) @mergecafeau is on the corner of beautiful tree lined streets Laura and Cathie St in Clontarf, QLD. I've had a couple of coffees there now and each time it has been superb which is such a positive when you're drinking a dair free milk. They also have a beautiful range of gifts, one being from @lovecomfypjs which look perfect ...for days like today! Anyway I have no ties to this cafe other than it's close to home and they make awesome coffee! Oh and they're pet friendly so you can take your doggy with you!
