25.01.2022 Red carpet... my dabbling, drawing and designing again!



24.01.2022 RECIPE "Stress- Free Fruitcake!" This is a last minute fruit cake - if you make anything this Christmas, choose this!!!! The fruit is soaked overnight in chocolate- milk, then flour added the next day and finito! The result is definitely a winner TMF! (Total Mourish Factor.) Its large, beautifully moist, nicely rich and a keeper! In fact it makes a wonderful dessert too, served warm with custard. You can eat this cake the next day after baking, no need to waste your dr...ool, patiently waiting weeks for this cake to develop. I find this flavour combination of fruit works well, but you can substitute other varieties if you like. The easiest and nicest fruitcake ive accomplished! 3 cups mixed fruit PLUS 4 & 1/2 cups total of extra fruit/nuts (Coles green packets are ideal): 150g (1pk) cherries (halved), 150g (1pk) cranberries (left whole) 150g (1pk) pk blanched almonds, (chopped roughly) 150g (3/4 pk) turkish apricots (slithers) 150g (3/4 pk) prunes (thirds) 75g (1/2 pk) ginger (finely chopped) 600ml carton choc milk ( I use mocha coffee/choc for extra richness) 1 tablespoon brandy 2 cups self raising flour Youll need 1x deep 23cm (9) round pan, lined once on base and sides with non stick paper. Ensure the paper sits 1-2 inches above the rims. * Mix all the fruit, brandy and mocha milk in a large bowl. Soak overnight in the fridge. * Next day, mix in the flour with a blunt knife. * Spoon into pan and smooth the top. (Decorate with extra nuts and cherries if desired.) * Bake 170c (150c fan) for approx 1&3/4 - 2hrs, until firm in the centre and a skewer comes out clean. (Ovens will vary, so check carefully.) * Drizzle with more brandy and cool cake in the pan several hours. * Keep in an airtight container in the fridge. * Ive also made this cake in various cake pans sizes. Its perfect in 2x 6pans (approx. 1hr & 35min time) or several small 4 pans. (Check timing at approx. 1hr)

23.01.2022 Merry Christmas everyone!! A little freezer dessert just perfect for our Aussie Christmas... ICE CREAM PLUM PUDDING To make;... Mix 2 cups of crumbled plum pudding (store bought) and 1/2 cup of dried cranberries into 2 litres of softened caramel and macadamia Ice cream. Pour into a plastic lined pudding basin (best to line 3 times) and freeze. To Serve; Pull from basin, remove plastic. Place upside down on a plate. Drizzle with chocolate ice magic (crackle) topping and sprinkle with chopped chocolate and more cranberries. See more

Decorated with choc buttercream, cherry ripe, choc shards, gold cachous, choc buttons and haintpainted gold chocolate spiers.

Its decadent and worth hiding from the little fingers... Chopped Marshmallows, Pistachios, Almonds, Red cherries and Cranberries mixed with 2 blocks of white chocolate. (Lindt is my favourite!) Drizzled with dark chocolate and scattered with chopped red cherries. More L>O>V>E!!

21.01.2022 Im going through the Christmas favourites for you right now! Another very easy recipe... The Berry Icecream Sorbet cake. (PS. I used to call my page Sweet Secretz for those of you who werent sure...) RECIPE: 1.Use a loose bottom tin, oil sprayed and lined with baking paper. 2.Mix the first layer of 2L vanilla icecream, chopped marshmallows, frozen rasbperry or strawberry pieces and chopped chocolate. Spread into tin and freeze until firm. ... 3. On the top layer spread a 1L layer of strawberry or rasbperry sorbet (shop purchased). Drizzle with white choc "ice magic" and decorate! L.O.V.E. 20.01.2022 A birthday cake for friend Barbara who celebrated a special one!! Layers of chocolate cake and chocolate buttercream then decorated with vanilla buttercream, macarons, roses, ferro rochers, choc spiers and choc cararamel drips. Finished with a gold bow. She wanted vanilla, chocolate and caramel colours... with my touch of feminine glamour.

20.01.2022 RECIPE SHARE -- STRAWBERRY SHORTCAKE If you have a few pre-Xmas festivities approaching, this is a simple alternative to the predictable pavlova. Two hand pressed pastry rounds, sandwiched and topped with strawberries, jam and cream. This torte is lip-licious, tender and impressive! With berries so plentiful at the moment... no excuse but to indulge!! (*NOTE: You can press the pastry into 10" rounds onto 2 flat trays covered with baking paper... but I use a flan tin for a pre...tty edge. If you dont have a food processor, rub the butter into the flour until it resembles fine breadcrumbs, then mix in the remaining ingredients, by hand.) PASTRY 2 cups self raising flour (or gluten free self raising flour) 2 tablespoons caster sugar 125g chilled butter or margarine, cubed. 1 cup pouring cream Preheat oven 220c / 200c fan forced. Oil spray a 25cm (10) loose bottom, fluted edge flan tin. Food processor, with metal chopping blade. Blitz shortcake ingredients together in food processor until finely crumbed, pouring in cream last. Blitz again till dough comes together. Pat mixture into a ball and cut in half. Press the first half of mixture evenly into flan tin. Bake 20 minutes. When completely cool, remove the ring and run a long sharp knife completely under short cake, rotating it. Slide it carefully from the base on to a flat serving plate. Repeat the steps to make a second layer of pastry. DECORATION 600ml whipping cream, whipped till stiff. 4 small punnets strawberries 3/4 cup strawberry jam, warmed slightly and stirred. *Spread first layer of shortcake with strawberry jam, then the cream. Scatter this with some strawberry SLICES (1 punnet) *Carefully top with remaining shortcake layer, more cream and strawberry HALVES. (3 punnets) *Brush strawberries generously with warm jam. Use a teaspoon to fill the gaps between berries. (Warm the jam again, if it needs thinning)

17.01.2022 RECIPE!! HOT CROSS MUFFINS!! EASY!! (Makes 12-13) With Easter now upon us, whip up a batch of these, faster than a jack rabbit! Simply create them in 2 steps, top with some glace crosses and warm them in the microwave before eating. These are moist little muffins, with the spiced flavor of traditional buns. IN A LARGE BOWL, STIR TOGETHER..... 3 mashed squishy bananas (approx. 1 cup)... 2 large eggs 1/2 cup oil 3/4 cup sour cream 1/3 cup milk ADD DRY INGREDIENTS ALL AT ONCE 2 teasp mixed spice 1 teasp cinnamon 1 teasp nutmeg 1/2 cup brown sugar 1/2 cup caster sugar 3/4 cup mixed fruit 3/4 cup choc chips 3 cups SR flour ( or SR Gluten free, but denser cake result.) STIR TOGETHER WITH A LARGE METAL SPOON SPOON INTO LARGE MUFFIN CUPS & BAKE APPROX 30-35 MIN IN 160C FAN FORCED OVEN. GLACE CROSSES 2 cups icing sugar 1 tsp margarine (or soft butter) 3 tablesp boiling water 1-2 drops red food colour Stir all ingredients together with a blunt knife.Icing should be consistency of thick custard. Fill inside a piping bag with a plain small hole nozzle. Pipe across rows of cool muffins. If glace crosses seem a little too fiddly for you, then simply dust muffin tops with some icing sugar. Warm the muffins 20 secs in microwave before eating. Serve with a little butter.

15.01.2022 It's been a BANANA MUFFIN morning. I call these Banana Bombs! Large Texan size muffins, with a soft, moist crumb. The perfect, easy "go to" muffin recipe! I like to use flavoured yoghurt within the recipe. Today I used passionfruit yogurt. It compliments BANANA very well! If you have SR wholemeal flour, then incorporate some of that too, for a slightly heavier texture, and healthier option. RECIPE BANANA BOMBS. (Makes 12 xlarge muffins.)... 250g butter or margarine 2 large over-ripe bananas 3/4 cup caster sugar 2 ex-large eggs 1/2 cup sour cream or yoghurt 1/2 cup milk 1/2 teasp bicarb soda 1 teasp nutmeg 1 teasp cinnamon 3&1/2 cups SR flour ( or 1 cp SR wholemeal and 2&1/2 cups SR white) 1 cup chopped walnuts (and extras for sprinkling.) Method; 1. Soften butter/marg in big bowl with microwave 1min. 2. Mash banana into that same bowl and stir. 3. Add next 7 ingredients and stir. 4. Add flour and chopped walnuts. Stir with blunt knife till just combined. This ensures your muffins remain light and fluffy. 5. Place mixture in 12 large muffin paper cases till full. Sprinkle with extra walnuts. 6. Bake middle shelf, 180c (160c fan) For 25-30 min.

08.01.2022 RECIPE ."Salted Caramel Popcorn - Rocky Road" An updated twist on a rocky road favourite! -Thank you to my friend Kara...for providing the base recipe. But with most ideas,,,I play, re-portion & individualise. Cant help myself! Ive added the additional soft caramels to give extra chew! This makes plenty - 20 perfect gift wrapping portions for Santa, Mrs Claus, the elves, Rudolph and all his reindeer mates! ... 250g packet of marshmallows (preferably white if avail) 110g packet Kettle Salted caramel popcorn 2 cups salted peanuts 1 cup roughly chopped soft caramels (jersey caramels are fine) 400g dark chocolate Oil spray and line a large baking dish (13x13"), extending paper above 2 long sides. * Place all dry ingredients into a large salad bowl and mix. * Melt chocolate pieces in a plastic microwave container. (50%power 2 min & then 30sec intervals, stirring between) * Mix chocolate into popcorn mixture, using a wooden spoon. * Spread into a baking tray. * Refrigerate until set.

This was a 4 layer moist red velvet cake, with raspberry compote and buttercream filling, finished with fresh flowers, white chocolate spiers, drips, two choc hearts and a bow. 03.01.2022 Semi naked cake I made for Ashlee and Ryan.s wedding yesterday. Seven layers of lemon coconut cake filled with buttercream. Served as a dessert with raspberry coulis (I made), King Island buttercream and Turkish rose dust (I made). It took a week to make the layers and one day to assemble the 2 tiers. The 2 separate tiers were driven very carefully to Darlington Estate, then I stacked and decorated the cake on site with grosgrain ribbon bows, peonies, roses and foliage. I took some autumn colored leaves, twigs and rosemary sprigs from my garden to finish. The brief was rustic, with white flora. It was a beautiful wedding and I was fortunate to be a guest too. Thank you Ashlee and Ryan!! xx
