24.01.2022 Featured in the recipe e-book, our signature vanilla cake (lemon variation) is layered here with raspberry buttercream and a raspberry compote. The compote is deliciously tart and sweet and can also be used as a topping for pretty much any dessert! Recipe as follows: Raspberry compote: 200g frozen raspberries 80g caster sugar... Juice of half a lemon Place all ingredients in a small pot and heat on low, stirring occasionally, until mixture has reduced by half. The fruit will have naturally broken down and the compote will have thickened. Allow to cool, then transfer to a jar and store in the fridge.
