25.01.2022 MEXICAN SALAD . . Of course one of the posts was bound to be a salad! As part of the #recreateacreator challenge this is my take on a roasted sweet corn Mexican salad. This months challenge was to post a budget meal! Although this is a side dish project, many of you must know by now salad is a meal any day of the week for me! So let’s get down to business:... Red kidney beans - $1 Sweet corn - $1 1/4 red cabbage - $1.05 1/2 can chopped pineapple - $1.80 1 haas avocado - 80cents (on offer that week) 1/2 red onion diced - 60 cents 4 baby reels peppers - home grown Dressing 1 lime - 80 cents Vegan mayo - 90 cents 1/4 cup chopped jalapeño - 57 cents 1/2 cup chopped coriander - 55 cents Total tally $8.07 . . 21.01.2022 RIBBON SURPRISE . . Butter cake made the Srilankan way is not too dissimilar to the a classic English butter cake! But with a few add ons this really compliments our Classic box! The fudgy brownie cake, paired with marzipan makes this butter cake a poshed up version of the classic Sri Lankan ribbon cake!

20.01.2022 PANDAN AND ROASTED WHITE CHOCOLATE CHIP COOKIES . . Do you ever have ideas of how you want something to look but every time you try it, it just doesn’t work? I have one such idea of creating Pandan and white chocolate cookies, but I wanted it super crispy on the outside and lovely and chewy inside (but for days)! Not just on the day, but the next and the next! .... . Well it finally happened! Those who followed my stories will have seen me shout about this last week! I’m so excited, that I’ve decided to pop them in my first launch box releasing shortly! . . Next to these super crispy cookies, you’ll find my eggless brown butter, cookie dough biscuits! Again! I toiled over this longer than the Pandan in all honesty! Trying to make cookies, eggless, but still have a lovely flavour and a chewy bite isn’t always easy! 19.01.2022 SESAME CHIKKI CRISPS . . To keep things authentic our boxes will always have an element that has not been tampered with! So in that vain, our first box will feature sesame crisps - Til chikki crisps! Sweetened with caramelised jaggery, and flavoured with roasted cardamom this chewy sesame crisp is a less sweeter option to balance out those taste buds!

I struggled to find a pic where masala chai looked like masala chai, as most of them were made inside a decorative cake!! .... . Made with home made masala chai spice and syrup this was an amazing combo; not overly sweet and really had all the flavour of the delicious Masala chai! 02.01.2022 LOVE CAKE . . There’s a shop in Colombo called Fab where they sell this cake called Love cake. It’s a perfumey, nutty, dense cake with a caramelly top! You warm it up in the microwave for 10 secs and its pure heaven! .... . I was introduced to this cake about 10 years ago when my husband asked me to try a piece that my sister in law had bought back! In true, back then Aarati style, I said I don’t like it! He goes, but have you tried this?, and again my typical response was no but I don’t like it! (This is literally what I was like with any kind of food mind you)! My husband, bless him was so perplexed; but wouldn’t give in and forced me to try a bite anyway! I ate my words and pretty much the rest of that cake! . . Anyway long story short - Sri Lankan love cake is such an amazing flavour! And these mini love cake loaves are my take on it! 01.01.2022 PANDAN & ROASTED WHITE CHOC . . Well it couldn’t be all cake could it?! Every week with the cakes there will be some sort of new flavour inside! For our launch week, we will be adding Pandan and white chocolate cookies, with a chewy centre and a lovely crisp finish! .... . Pandan is popularly used in Sri Lankan curries and rices! However it doesn’t feature as often in dessert. So here is our take on creating that flavour in a biscuit! . . The smell of freshly chopped Pandan takes us back to a wholesome plate of lamprais, how about you?

These beautiful little slices are a flavour sensation from the first bite! We wanted to evoke all the traditional flavours of a Indian Masala chai through this slice and the addition of beautifully decadent caramelised icing in this cake is just to die for!
