24.01.2022 Our Sunday night dinner tonight. I've been wanting to make sticky bbq ribs for a while now and finally had the time to do them today. I had 2 large runs and one smaller one which I put into the slow cooker. I slide up an onion and about 5 cloves of garlic then sat the ribs on top. I made a marinade of: cup brown sugar... 1 teaspoon garlic powder 1 teaspoon smoked paprika 1 tablespoon Worcestershire sauce 1 tablespoon red wine vinegar cup Jack Daniels (optional, and any bourbon works) cup store bought bbq sauce I put my slow cooker on high for around 4 hrs ( can also cook very slowly in the oven) then once they were falling off the bone, I transferred them onto a tray, brushed them with bbq sauce again and put them under the grill for 5 minutes. 17.01.2022 Over the weekend I made this cute cake a lovely little girl's birthday party! It was vanilla cake with vanilla Swiss meringue buttercream. There was also a guest at the party that was allergic to egg, so I also made some egg free cupcakes with American buttercream so that she wouldn't have to miss out on the festivities! 05.01.2022 Maltese style Ghagin il-Forn, translated literally it becomes pasta in the oven aka, pasta bake! Honestly this was the first time I've ever made this hugely popular Maltese dish. And yes I had to ring up my mum to confirm the amount of eggs to put in it! So lucky that I have my mum to call and ask these little things! I made a simple pork mince bolognase sauce like I'd make for spaghetti (3 onions, some garlic, 500g pork mince, 5 chopped mushrooms, a bottle of passata, s...alt pepper and oregano). Mixed it with 500g of cooked and drained penne pasta then beat up 4 eggs in a bowl and added it to the mix. I also added about half a cup of grated parmesan cheese.
