17.01.2022 At Callington Mill Distillery, we have been distilling slow and long at our Glenorchy prototype distillery with a narrow cut point. The unique shape of our copper pot stills is designed to promote reflux and enable more copper contact resulting in a fruitier and higher viscosity spirit that will be matured in distinctive sherry oak casks from the Jerez de la Frontera in Andalusia, Spain. 17.01.2022 The most important part of our whisky making journey is sourcing the perfect cask to match our new make spirit. The cask contributes 100% of the colour and 70% of the character and flavour profile of the whisky. For that reason we have set up our very own cooperage in Pontville,Tasmania to manage all our oak needs and guarantees premium quality every time. 16.01.2022 Our home Callington Mill is situated in the picturesque town of Oatlands. It was built in 1837 and is a Lincolnshire-type tower mill. Its outside diameter tapers so that stones of each course had to be cut to a different size and taper from the above and below. The precision of its construction is clearly the work of a master mason. We are thrilled our new home and brand is the majestic 183-year-old historic landmark.

It is, for this reason, we established Tasmanian Tiger Cooperage, located at Pontville Tasmania, to individually craft and cooper all our oak needs ourselves. We have also formed and developed strategic partnerships with family owned cooperages in Jerez, Spain, and the Douro Valley in Portugal - ensuring a quality supply of various Sherry and Port Oak Casks.
