20.01.2022 This month’s market report With the daylight hours getting longer our laying egg numbers are increasing and our eggs will be in plentiful supply at this weekend’s Orange Farmers Market. Charlie’s oyster mushrooms are also enjoying the warmer weather and are in abundance at the moment. Our favourite way to enjoy them is sautéed in butter with leek or spring onions. Once cooked top with parsley and a squeeze of lemon juice and season with salt and pepper. ... The recent cold snap has impacted on the growing rate of our meat chickens. Chicken will be in limited supply at this weekend’s market. Our Spring lamb is finished on our diverse regenerative pastures resulting in the tastiest, succulent and nutritious lamb around. Our lambs are certainly benefiting from the current seasonal conditions. We will have all of your favourite lamb cuts available. We look forward to seeing you at this weekend’s Market at the Orange Showground.

18.01.2022 Our laying hens are free to range. That means a few of them call our garden home. I found this nest while spending time in the garden today. These eggs will make their way into the pan for breakfast tomorrow.

14.01.2022 Reflecting back on a very wet week at Carbeen. This week whilst getting a neck complaint sorted out by The Pinnacle Physiotherapy Clinic, which is now , we got to talking about farming and the weather. As we discussed how much rain we’d had this week the inevitable question came up ‘Are your dams full?’ My answer rather nonchalant was I have water in my dams but no they’re not full and I have had no runoff into them from this 120mm rain event (apart from this one pictured w...hich is my dam from my access road on gradient which with the help from Darren J. Doherty is designed to catch water from my impervious roads). For every 100 raindrops that fall on a healthy landscape only 12 drops do not enter the soil and only 2 drops make it to our streams (source Walter Jehne) yet overwhelmingly we as humans are focused on this 2%. As evidence the federal and state governments have set aside billions of dollars in recent budgets to fund new dams or upgrade existing dams. Our society has politicised, legislated and monetised our broken water cycle. If all our efforts were invested into restoring our soil function we would resolve all the greatest issues facing our society - water security, climate change and human health. All these are intrinsically linked. We love that those we feed are interested in the farmers that produce their food and fibre, however is it time that we framed a different narrative? Perhaps a question to your farmer could be ‘How will this rainfall allow your land to function?’ What do you think?

13.01.2022 A wintry, stormy afternoon. Moving sheep onto fresh pasture. Spring time (I know it’s still winter, but our grass believes Spring starts in the second week of August) means paddock moves become quicker, speed will continue to increase as we really hit our grass growing ‘straps’ in the middle to late spring months.

12.01.2022 This month’s market report We will have chicken, lamb, broth and eggs available at tomorrow’s @orangefarmersmarket Our youngest hens are just starting to lay which means that we have an abundance of Wee Willie eggs. Named after our daughter Willamina, these are the eggs a chicken lays when she has just started laying and, just like Willie, these eggs won’t be small for long.... Wee Willie’s are our favourite sized eggs for breakfast. Enjoy them boiled, poached or fried. The yolk to white ratio is quite large adding to the deliciousness of these eggs. If you plan on baking with them we recommend weighing them as most recipes use 60g eggs and you may need an extra one. We will have pasture raised chicken (including frames and feet for broth) and our delicous grass fed lamb available. You will find something perfect for a barbecue, mid week meal or a Sunday roast. If you need any advice on how to cook your preferred cut, please don’t hesitate to ask. We will also be serving hot cups of homemade chicken broth and have 1L take home jars available. Our bone broth is always popular and often sells out. Apologies that there are no Charlie’s Shrooms at the moment. 12.01.2022 ‘Tis the season for rainbows it would seem

09.01.2022 We spent our morning at @orange_crop_swap Held outside @groundstonecafe this is where you will find us on the last Saturday of the month. We love everything about crop swap. From swapping surplus produce to connecting with likeminded individuals and teaching the children about food waste and that we don’t need to take home any duck eggs even if they do look blue.... Thankfully Miracle and Wednesday haven’t eaten ALL our mulberries so today we swapped mulberries, preserved lemons, surplus egg cartons and parsley pesto for some seedlings, rhubarb, peas, olives and lettuce. What a haul!

07.01.2022 This is a paddock of our winter cover crop. You may recall a picture of this crop from back in April. The paddock is now knee high in crop after 2 grazings with sheep and cattle during Winter. We will leave this crop for about another month until all the winter grasses are reproductive before we terminate the crop to put in a Summer cover. The goal with this paddock is that we will improve soil biology to the extent that we are comfortable that we can grow a cash crop, grown only with the use of soil biology to generate our own ‘beyond organic’ grain for our poultry operation. All this is being achieved without any chemical or synthetic input and without ploughing the soil! Here at Carbeen we are just working in balance with nature.

05.01.2022 Meet Wednesday! Wednesday is one of the children’s pet ducks and the newest member of our crew. A combination of the drakes not doing their job and the Shannons not candling the eggs in the incubator mean that in her batch we hatched more rotten eggs than ducklings. Who wants to see more posts about Wednesday and our duck enterprise each Wednesday?

03.01.2022 Happy International Dog Day! Meet Hattie, one of our 3 Maremmas. Her job is to keep predators away from our pasture raised hens. Livestock guardian dogs and working dogs play an integral role at Carbeen. They are smart and loyal and we are truly thankful for what they do!

03.01.2022 Kale has been a staple in our seasonal produce boxes recently so we thought we would share our family’s favourite ways to enjoy it. 1. To make kale chips remove the stems and cut kale into pieces. Drizzle with coconut oil, season with salt and roast at 160C. 2. Sauté spring onions or leek and fennel in butter or ghee until soft. Add the kale, stirring occasionally until cooked. Stir through a good handful of parsley. Remove from the heat and squeeze lemon juice over the top.... 3. Sauté or steam and add it to a quiche with some local feta and our pasture raised eggs. 4. Make a batch of The Healthy Chef’s seasonal minestrone soup. It’s a staple in our house at the moment. 02.01.2022 Meet Hattie. Hattie is one of 3 maremmas or livestock guardian dogs on our farm. She’s named after Hattie the hen from the children’s book Hattie and the Fox who alerts all of the animals to the cunning predator. Together with her sister Indy and their mate Cappi, they do a pretty good job looking after our flock but unfortunately we’ve still had a few predator attacks recently. Chicken will be on the menu at this weekend’s shop and go Orange Farmers Market but stock is limit...ed - we have no thighs or wings available. Lamb and eggs are in plentiful supply. 02.01.2022 Farming is a 365 day a year job. There are few days off and sleep ins are rare. Each Sunday we try and spend some time together as a family. This morning we enjoyed a morning tea by the side of the dam. We even took Wednesday the kids’ pet duck with us. A Sunday well spent brings a week of content. What does a Sunday well spent look like for you?

02.01.2022 Yesterday we had the honour of meeting Ludmilla from Iggy's Bread We supply them with our pasture raised eggs for making brioche and croissants and to sell in their shop. Their commitment to the environment and spreading the message about regenerative agriculture is astounding. From the ovens which cook the bread and heat the water for their home above the shop to the fruit trees and herbs planted outside their shop, worm farms out the back and the foods scraps that are compo...sted, it truly was humbling. One of my favourite things about visiting businesses like Iggy’s is connecting with like-minded individuals (and sampling the produce )
