25.01.2022 Big brother / Little brother.... I regularly make a starter for my beers having found that allowing a larger healthier yeast crop to grow leads to quicker and cleaner fermentation. This time around its for a Barleywine, a beer notorious for stalled fermentation and attenuation challenges. To ensure a vigorous, and complete, ferment Im preparing not one but TWO starters.... First starter is larger, and after 24 hours went swimming in a pool of tasty wort at 1.105 OG. Second will come visit in a couple of days to help kick things along....

20.01.2022 Putting away some homegrown hops today. I made an effort and secured another two varieties for this season. A Cluster-Golding hybrid from Pemberton, and some Kracanup from Albany, to go with my existing Victoria. Prepared a special patch for them, deep, well drained and aerated with the correct ph. Planted and sat back to wait. Initial shoots appeared in August, but I cut these back and watched for the real action to begin in late September. Proper vigorous shoots from all ...three varieties. Since then Ive learnt the three Ws of growing hops; Water, Water, Water I made sure to fertilise regularly and eventually was rewarded with hops! Its amazing how much they compact down in a vacuum sealer, a 9L bucket down to almost nothing... 70g total Have you tried growing your own? Got varieties and wanna swap?? (assuming youre in Australia)

19.01.2022 Theres something about growing your own hops. Dont get me wrong, Im not turning my property over to growing barley and hops despite wanting to support local business. I figure that Australian malt is just local enough, and a few nice hop varieties grown right here at the Brewhouse work perfectly in a wet hop beer to showcase our local ingredient.

17.01.2022 NEIPA, 7 days grain to glass (which is a record for me!) As I mentioned previously, I love this style but have kinda avoided brewing one as there are SO many great examples already out there. Anyway, here it is; v1.0 and its pretty good. I used Riwaka, Azacca and Brooklyn hops for this one, all post-boil. Maybe next time Ill mix it up, but Im happy for my first effort. ... Have you brewed a NEIPA?? What is your go-to hop combination and schedule??

15.01.2022 ANZAC Day, every year on this day I brew a beer in homage to the Servicemen and Women who gave their lives for their country. This year Ive gone hyper-local with homegrown hops, as well as oats and golden syrup. Ill add coconut as a dry hop to finish out the ANZAC Biscuit experience. 14.01.2022 Had a fabulous collab brew day with Bright Tank Restaurant & Bar today. Thanks to my crew at West Coast Brewers for setting this up. I learnt a heap about process, and it was interesting seeing once again how the methods we use as homebrewers translate to a commercial scale. 13.01.2022 NEIPA, again..... It was only a few months ago that I brewed my first ever NEIPA, and now here we are with brew number 4. Im still working on the hop combo, but I think Ive got the timing just about perfect. Loving that orange juice vibe, as well as the huge juicy fruit flavour. This one has 5kg of local peaches added for the last couple of days in the fermenter. ... Whats your favourite fruit/beer combo?? @ Carmel, Western Australia, Australia

12.01.2022 Fermentation isnt all about beer. Its about yeast and temperature! Heres a little experiment that I tried recently with some @powerade, dextrose and @lallemandbrewing yeast. I mixed the powders into 5L of water and brought it to a simmer for a few minutes to kill off anything untoward. Chilled and into a glass carboy with some yeast. 3 weeks later, after ramping the temperature, and monitoring closely, I present Blue Meanie, a 5.7% alcoholic beverage that has the added be...nefit of keeping you hydrated (this may not actually be true still) What weird and wonderful experiments have you tried?? Branches out into meads, cysers or braggots lately??

07.01.2022 First year Kracanup hop bine coming along nicely. Last year was my first year growing hops, and I had them in pots which turned out to be a mistake. This time I carefully prepared a bed and planted three different varieties to see which would do best. The Kracanup was a crown that I got from Colin and Britt in Albany and its been an absolute cracker. Cant wait to use these lovely cones in a wet hop ale...

03.01.2022 Testing, testing, testing. I used to think that brewing was all about saving a few bucks and the fact that your friends suddenly stop bringing beers over when they visit. Turns out its actually all about continuous improvement, identifying incremental changes that you can make which improve your brewing. Today Im taste testing a saison to see what I could improve on. Maybe the next batch needs a different yeast, or I could tweak the fermentation profile. Maybe I need to m...ash at a different temperature. Either way its a delicious, and vital, part of improving your craft What are some of the changes that youve made where youve seen big improvements??

02.01.2022 Harvesting again, Kracanup this time from a crown I purchased last year from the guys down in Albany. Pretty impressed with the cone size and volume, these will be gracing a simple pale ale as a wet hop addition in the next few days...
