25.01.2022 This week on Our State on a Plate I made a tasty seafood chowder. Its a great way to use the whole fish, just ask your fish monger to fillet the snapper then keep the frame to make a stock. I didn't add white wine here but it definitely wants it, deglaze with 1/2 a cup once the veg has cooked down a little Seafood Chowder serves 2 60 g butter 2 bacon rashers finely chopped 1 leek finely chopped... 1 carrot finely chopped peeled 1 celery stalk finely chopped 2 potatoes finely chopped peeled 1/3 cup gf plain flour 4 cups fish stock 400 g white fish fillet cut into pieces 250 g clams 200 g prawns 3/4 cup cream 1/3 cup parsley chopped 1 pinch salt and pepper *to taste 1/3 cup parsley *extra *to garnish 1 pinch seasoning *to taste 1. Heat half the butter in a large pan, then add bacon. Cook over low heat for 5 minutes. Remove bacon from pan and reserve. 2. Add remaining butter, stir in the leek, carrot, celery and potato. Cook over medium heat, stirring frequently for 5 minutes, or until vegetables have softened and are lightly golden. 3. Add flour, cook for 1 minute, then gradually add heated fish stock. Cook, stirring for 5 minutes, or until mixture boils and thickens. 4. Simmer over low heat for 5 minutes, stirring occasionally. 5. Add fish pieces and cook for 5 minutes, stirring frequently. 6. Add scallops, prawns, cream, parsley and reserved bacon. Mix well and cook for 5 minutes without letting soup boil. 7. Add salt and pepper and garnish with parsley. 8. Serve immediately.

23.01.2022 Have you ever indulged in the flaky, creamy goodness of a Matchstick before? If you have but it's been a while then I hope this video sparks a tasty matchstick revival. If the answer is no; then please let me introduce you, trust me you're going to love them!... I had these for the first time at my 21st birthday and they made the best dessert option for the crowd en masse! Strawberry, Vinocotto + Pepperberry Matchsticks Serves 4 Ingredients: 2 x sheets of puff pastry 25cmx 25cm 2 x punnets strawberries 1 jar strawberry jam 150ml vinocotto tspn ground pepperberry 250ml whipping cream 1 tspn vanilla paste 1 Tbspn icing sugar + 1 for dusting - Pre-heat oven to 220c Line a baking tray with non-stick baking paper. - Cut the pastry sheets in 8 rectangle pieces. Place on the tray with a bit of space between each piece and bake for 15-20 minutes or until the pastry is crisp and golden, transfer to a wire rack to cool completely. - Soak strawberries in vincotto and pepperberry for up to an hour. - Whip the cream with 1 tbspn icing sugar and vanilla paste until you have firm peaks. - When youre ready to serve, line up half of the pastry rectangles and spread a then layer of jam on, add lashings of cream then the soaked strawberries. Then add a bit more whipped cream if required. - Finish by adding the pastry tops and dust with icing sugar!

21.01.2022 Tracy Vo's dish was so freaking tasty on this episode of Our State on a Plate and if you have a crustacean allergy or don't like prawns it goes just as well with tofu, chicken or a firm flesh fish. The flavour punch comes mainly from the Bombay spice mix by Spice Mama Hopefully this dish will take you through to hump day swinging!

17.01.2022 This salad is such a winner and a great way to see out last seasons @wasoap @chonnichiwa made it for me back when she was working at @taylorscafe and it went off! In a good way of course Give it a try and be sure to show me how to go. Beetroot + Carrot Slaw w/ feta and candied walnut 2 large beetroot grated... 1 carrot grated 1/4 red onion, finely sliced 1 small bunch coriander, sliced 1 small bunch mint, chopped fine 1 pkt dill, chopped fine 300G spinach 200 ml extra virgin olive oil 2 tbspn balsamic vinegar 150g danish feta salt and pepper to season 200g walnuts 150ml maple syrup Candied walnut - 200g walnuts, spread evenly on a lined oven tray - Coat lightly with maple syrup and drizzle with a small amount of olive oil to prevent sticking. - Roast on 160c for 10 minute intervals, keep an eye on them! Move nuts around with a spoon to prevent sticking together - Once the walnuts are crunchy remove from oven and keep moving them until theyve cooled to prevent them from sticking together. These will keep for a few months out of the fridge. Method for salad: - Mix all grated and chopped ingredients together in a big bowl and coat with extra virgin olive oil, balsamic, cracked black pepper and mix well. To serve - Season with a bit of sea salt and add a handful of spinach to a platter, add a layer of beetroot mix, a crumble of feta and a handful of scattered walnuts, then - Add another layer of spinach more beetroot, feta and candied walnuts and a swirl of extra virgin oil.
