Fresh, crispy, lovely carrots from the @carriageworksfarmersmarket Just a bit of olive oil, a piece of garlic and allspice. Also don't ever waste the tops, they are delicious, you can use them like parsley to garnish (what I did) or even make a pesto or a soup. 14.01.2022 Most Australians, unfortunately, think that red wine has to be pungent and gravelly, that you have to feel alcohol in every sip. Well sorry mates, this is not how a glass of wine should be ! Wines like this, in France, we call them Green, as an unripe fruit it's an unfinished wine... Now at Chapel Hill @chapelhillwine they know perfectly how red wine should be and they make great wines - no question about that ! 09.01.2022 Today is St Nicholas day and I'm not a religious person but it's the perfect excuse to be back to basics ! In Alsace, France, we traditionally bake these little guys called "Mannala" (tiny man). It's basically a brioche dough with a few chocolate chips to make it look like a tiny man. You have to shape them with scissors, it shouldn't look perfect... And it's delicious with some home made hot coco, on cold winter nights. Or, if you're in Sydney like us, and it's 32 outside, you can have a glass of cold milk

07.01.2022 Have you ever been to Brisbane - one of my favourite Australian cities ? So you must have been to @gauge.brisbane ! It's a culinary journey they offer us every time... My first thunderbolt was their signature dish : black garlic bread - brown butter - burnt vanilla. It's insanely good and you'll absolutely want the recipe (but won't get it, I tried!) And with that dish you know what's waiting for you in that restaurant. Forget your usual way of seeing food, don't try to figur...e if it's an entrée or a dessert, don't look for sweet or savoury. What you're about to experience is far beyond that... This is the dinner we had last July.
