Brb, drooling a little Sophies recipe for vegan cheesy sauce: 2 cups diced potatoes 2 cups diced carrots... 1/2 onion diced 2 cloves garlic 1 1/2 cups water 1 can Lima beans 1/2 cup nutritional yeast 2 tbs oil 1/4 cup tapioca starch 2 tbs whole grain mustard 1 tbs lemon juice Steam potatoes, carrots, onion and garlic until soft. Place all ingredients into a blender and blend until smooth. Pour into a pot and heat gently, stir until thickens. You may need more water for consistency.
