23.01.2022 The wonderful house we are staying in has the best kitchen!!! All the pots, pans, trays, measuring cups! Scales, electric beaters, a beautiful selection of cook books and even a whisk! We had such a simple dinner tonight of baked super fresh whiting from the butcher in Willunga with garlic, lemon thyme & my first ever beurre blanc sauce steamed potatoes & a green salad from mum’s garden. Thanks to a well used Stephanie Alexander Cooks Companion @growcookeat found on the s...helf (it seriously never disappoints): instructions & possible substitutes/alternatives are always great, the beurre blanc sauce was delicious!!! @annemaree.c & Howard your Beachside at Normanville is like home away from home! 23.01.2022 I love how food & wine can take you on a journey.... the wine Matteo brought home (a 1988 Marchesi di Gresy Barbaresco) brought back memories of many years travelling to Piemonte - even before we met! Last night we had Osso Buco & risotto alla Milanese with I think the most delicious home grown steamed broccoli thanks to our friend @cait_angas ! I started the casserole the night before and finished off in the oven a few hours before dinner. ... Sofia and Filippo enjoyed practicing their long division (they probably have a new name that these days, I can’t keep up!) and working out the age! Probably the most enjoyable 32 year old Nebbiolo I’ve had in a very very long time. Purchased in Italy before Sofia was born from a Uni friend of Matteo’s after a restaurant had closed down... Now that we are hoping our trip back home might go ahead next July, I’m hoping to prepare a dish each week that brings back memories of our travels. FC x

20.01.2022 If you are heading to the coast near Cape Jervis and you love seafood (but had no luck ) we bought these delicious local squid yesterday and flathead tails at Al and Kerry’s Fish Sales (thanks to our fantastic hosts for the tip)! They have a Facebook page and post their daily catch and anything else they have brought in. Al said if we came early this morning they’d have been shucking a fresh delivery of KI .... the shop was super clean, friendly service & super fresh prod...uce. Al even offered us a . Matteo left for the Barossa yesterday to prep for opening today so it was such a shame he missed out! The bread we ordered and collected from @homegrainbakery in Aldinga was also well worth the drive (they tend to sell out and close at 4pm). The Willunga butcher had a great selection of fresh fish (as well as meat), very friendly service. Next door at the whole foods store we found beautiful local eggs & honey for breakfast provisions. Lunch at the Victory Hotel on a rainy day Tuesday was great as always, glad we booked as it was bustling! Thank goodness for Monopoly & Scrabble for rainy days at the beach! If visiting on a Friday afternoon I’d be planning sunset drinks at @fallfromgracewine in Aldinga. Gill also stocks some beautiful artisan delights to go with your vino! Casa is open daily from 9 till 3 from Thursday to Sunday, I’ll be back behind the bar tomorrow morning. If you are in need of bread Matteo will have his delicious sourdough ready from 12 today. 17.01.2022 Can you believe this was taken when we opened our doors 8 years ago? Please if you can drop in and say ciao tomorrow night 18th December from 5pm to 8pm, we will have wines by the glass & bottle available for purchase and some complimentary small bites (no dinner service). If you need to do some Christmas shopping we can gift wrap for you as well + Lucky door prizes!!... Casa Carboni or the Italian place was opened by dear friend & lamb supplier Jan Angas from Hutton Vale Farm. We had spent months writing business plans and asking for loans but in the end a lot of help from lots of friends, family and some amazing offers of support from sponsors, namely @smegaustralia helped us achieve our goal. We were so fortunate & grateful and still are to this day. Filippo was only a couple of months old when we decided to take on the lease at 67 Murray Street in Angaston! Thank you to everyone that has stepped through our doors, participated in a cooking class, dined at our tables, shared our story & our beautiful community And to all our amazing suppliers over these 8 years GRAZIE MILLE, many have been with us since we opened... We haven’t had lots of staff, but they are /have been hardworking local high school kids and we are so grateful. We have a new delivery of French market baskets on their way, I’ve also been making these beautiful Liberty cloths that can be used as an accessory for your bag or as a super soft handkerchief ... 17.01.2022 Absolutely LOVING our new Puglia cooking class menu! Panzerotto fritto with cherry tomatoes & @barossacheese cache (cow) curd in a fried pastry parcel.... I could have eaten them all!! Gnocchi with a fresh tomato sauce, basil & Burrata...... Orechiette with broccolini, Ortiz anchovy & garlic! And dessert an adaptation of a Pugliese sweet, baked pastry lovely & light filled with lemon crema pasticcera . This was our very first Puglia cooking class and it’s definitely back on next year! 13.01.2022 A day of pick ups in the city for the shop & a picnic in the Adelaide Botanical Gardens with friends... the wisteria arbour still looking fabulous and although not as full of blooms as a week or 2 ago much better for the hay fever! The water feature in between the 2 arbours remains a favourite for the kids as they grow older, as do running races in the rose gardens. Some soaked up the Spring sunshine on the steps near the kitchen garden... 11.01.2022 After 2 nights of a mix of Casa leftovers & a bit of this and that for the kids (thank goodness for the portioned chicken stock in the freezer for chicken noodle soup!), I finally had the time to get to the butcher and tonight we had delicious local free range Marylands. I’d finished our reserves of garlic so I put some thick slices of onion under each one and the rest in the pan, a few bay leaves then seasoned the skin well, a drizzle of lemon juice and a generous glug of o...live oil on each one (plus a few little knobs of butter for good measure )... Although Sofia would prefer the breast from a whole chook, when time is short due to the after school taxi service finishing late, portions are so convenient! A tray of roast potatoes and a big head of steamed broccoli and The old hand stamped cotton table cloth is out and we have started lighting candles (well the kids have become quite keen to light them, and blow them out, and light them again ...and I remind them every time of the dangers of burning themselves) & this sets the scene for a special family occasion. 09.01.2022 Spaghetti alla Chitarra was today’s pasta masterclass’s 3rd savoury pasta , (the first 2 being roasted pumpkin ravioli & strozzapreti) and as full as everyone felt they did a great job in eating everything they made ! 09.01.2022 It really did feel like Christmas had come early yesterday as we reopened the doors from 9 till 12 and then I went home to prepare dinner! It was so lovely to see our locals pop in for a coffee & treat. With the help of friends we enjoyed hummus & vegetable crudités, a delicious rolled shoulder of pork from our local butcher @barossasmokehousebutchers , roast local potatoes and some beautiful salads. Roasted carrots , dates, fetta & mint was divine!... For the pork I slid in some slices of garlic and sage leaves in the middle of the roll, then placed on top of some carrots, some halved onions, and herbs from the garden sage, thyme & rosemary. Fortunately the butcher had already scored the skin so into the scores I rubbed a generous amount of salt & olive oil. Into a hot oven (220) for half an hour and then a quick baste and a little splash of white wine and back in for 40 mins at 190. Rested for about half an hour. On a warm Spring evening it was perfect to have it served warm with salads. The cooking juices were and our youngest guest said it was delicious and asked what I put in it! Gorgeous Maya! X Sofia saved my hands and made a batch of pâte sucrée for this beautiful apple tart from @thecooksatelier in Beaune.... the trick of placing the tart shell into the freezer for 15 mins before blind baking - why did I not know this before!!! Brilliant! Now I’m ready for salads and soda water until the 25th of December as we have indulged ourselves in the past week!!!!! This year has been a mental roller coaster, and we haven’t been impacted any where as much as those in other states and of course around the world, I just can’t imagine... My strategy has been to take time out, cook food I love when I can and go for long walks when time permits. We have also had many dinners of scrambled eggs or cheese on toast when the energy levels have been dwindling! Looking forward to jumping into December and 2021
