19.01.2022 No, it's not what it looks like, this is Stinging Nettle which is used for our number 504 biodynamic preparation. It has so much vitality and it is usually prepared by simply burying the leaves in the ground over a year and then added in the compost. Making the compost inwardly sensitive and receptive, a function of the element nitrogen. The Castagna Vineyard is situated at an altitude of 500 metres five-and-a-half kilometres outside the beautiful town of Beechworth in Northeast Victoria, high in the foothills of the Australian Alps. ... The soil consists mainly of decomposed granitic-loam on a base of clay, the climate distinctly Mediterranean with hot days and cool nights. The land is farmed biodynamically, using Rudolf Steiner’s biodynamic principles as Julian Castagna believes it is the best way to achieve optimum fruit quality that best expresses its terroir. Hand harvesting leads to gentle crushing of whole clusters and some destemmed grapes. Fermentations take place at their own speed with native yeasts, pressing is done by hand with a basket press, and the wines are never fined or filtered. New oak is generally kept to a minimum. Adam’s Rib is son Adam Castagna’s project, but very much a chip off the old block in terms of style. Elegance and authenticity are the watchwords here. In this blend, the Nebbiolo gives the wine tension and structure whereas the Shiraz bequeaths a lovely roundness. The nose speaks of worn leather, freshly turned earth, some tar and rose petal, and just a hint of Chinese five spice. In the mouth there are lovely floral hints and suggestions of raspberry, cherry and anise. . .
