22.01.2022 So, I totally winged this PAVLOVA last night and it was amazing, soft and pillowy in the middle with a chewy exterior so here’s the recipe... 7 egg whites at room temperature 1 1/2 cup castor sugar 1 tbs cornflour 1 tsp white vinegar ... Preheat oven to 150. I used my stand mixer with whisk attachment, ensure bowl and whisk are clean. Whisk the egg whites until you have firm peaks, then start adding sugar, a tablespoon at a time, allowing to incorporate well before the next addition. This will take about ten minutes until glossy and firm peaks form. (To check if the sugar is well incorporated, place some mixture between your fingers and if you feel granules you need to keep whisking.) Add vinegar and cornflour and whisk for a further minutes. Line a baking tray with baking paper (place some tiny dots of the meringue on the tray to help the baking paper stick) and form the shape of the pavlova - I just did a random circle. Reduce oven to 110 and bake pavlova for 1 hour and 20 mins. Turn the oven off and allow to completely cool (3 hours). To serve, I simply whisked some cream with vanilla bean and topped with berries, however the combinations are endless. See more
