25.01.2022 Recipe of the Week! Cauliflower Arancini (vegetarian; serves 10) Ingredients... 200gm arborio rice 2 onions 6 cloves of garlic 2 heads of cauliflower 200gm grated gruyere cheese 60ml truffle oil 2lts vegetable stock 300gm panko breadcrumbs Salt and pepper 500gm plain flour 1 egg 100ml milk Method 1. Dice onion, chop garlic, chop cauliflower and grate cheese 2. Roast cauliflower till dark in colour 3. Heat pan and sauté onion and garlic 4. Add rice and vegetable stock and stir till cooked 5. Add cauliflower, cheese, salt and pepper to cooked rice 6. Spread onto a lined tray and refrigerate 7. Once cooled down roll into 40gm balls 8. Mix eggs and milk 9. Roll balls into plain flower, then egg mix and dip into panko breadcrumbs 10. 24.01.2022 Recipe of the Week Mini Cheesecake (makes 20 serves) Ingredients Cheesecake... 375gm cream cheese (make sure it’s good quality) 190gm icing sugar 250ml thickened cream 60gm mango puree 3 sheets gold leaf gelatine Sponge (buy from your local supermarket) Ingredients - Mango Glaze Small tin of mango puree 3 sheets gold leaf gelatine Method Cheesecake 1. Separate gelatine leaves and then soak in cold water until soft set aside 2. Mix cream cheese in a mixer with icing sugar until smooth 3. Squeeze the moisture out of the softened gelatine leaves and then add to the mango puree. Warm gently (ideally over a bain maire) until the gelatine dissolves evenly throughout 4. Add of the cream cheese to the mango/gelatine mixture and then combine with the remainder of the cream cheese mixture 5. Gently fold the thickened cream through the cream cheese/mango mixture. Spread onto the sponge base and refrigerate (approximately 1 hr) Method Glaze 1. Soften gelatine leaves as per the cheesecake method above 2. Squeeze the moisture out of the softened gelatine leaves and then add to the mango puree Warm gently until the gelatine dissolves evenly throughout. 13.01.2022 Recipe of the Week! Honey and Almond Bread (Makes one 30cm loaf) Ingredients... 225gm honey 140gm caster sugar 3 eggs 90ml oil 90ml orange juice 200gm plain flour 3gm ground cinnamon 3gm all spice 3gm ground ginger pinch salt 3gm baking soda 80gm almond flakes 2gm vanilla essence 5gm icing sugar Method 1. Mix honey, sugar and eggs together in a large bowl 2. Slowly add orange juice and vegetable oil. Combine thoroughly 3. Add the remaining ingredients with the exception of 20gm of the almonds for garnish 4. Line a baking tin (approximately 30cm tin) with baking paper. Grease the sides 5. Place mixture in the prepared tin, sprinkle with almonds 6. Bake at 160c for approximately 40 mins or until a skewer comes out clean 7. Turn out onto a rack and let cool. Mango and Coconut Sago Parfait (gluten-free; makes 10 serves/cups) Ingredients... 250gm mango puree 250gm water 80gm sugar 12gm gelatine (sheet) 50gm coconut milk 65gm condensed milk 450gm sago 400ml tin of coconut milk Mint leaves for garnish 1 small, diced mango cheek for garnish Method 1. Combine sago and coconut milk and set aside to soak for one hour 2. In a saucepan, combine mango puree, water, sugar, coconut milk, condensed milk and bring to the boil. Upon reaching boiling point, immediately remove from heat and mix in gelatine sheets that have been softened in cold water 3. Process until smooth then pour into glasses and place in the refrigerator for 2 hours to set. 4. Once set, top with sago and coconut milk mix 5.
