19.01.2022 School or work lunchbox idea No 3 - Gluten free carrot cake muffins. Recipe link below. I've changed the recipe from making one cake to making 24 mini and 8 large muffins. To make these muffins for school, I have swapped the almond meal for gluten free flour (you can make your own easily), and subbed the grape seed oil for rice bran oil as that is what I had on hand. On some I added walnuts (those not going to school) I also omitted the icing to reduce the calories. You have to try this recipe. **Salmon, quinoa, feta and mixed vegetable salad** So many substitutions can be made to this recipe to make it uniquely yours. Eg, cook chicken tenderloins instead of salmon, use goats cheese instead of feta (I did), add extra vegetables.
