03.01.2022 "Leaky gut" is a misnomer - we all have leaky guts - as this barrier is not completely impenetrable (and isnt supposed to be!). However, reducing inflammation by looking after the health of your cells that line the digestive tract is one of the most important aspects to overall health. This tract or 'tube' is constantly bombarded with substances coming in from the outside and also degradation from poor access to the building blocks that make healthy cells. So that the substances that need to stay on the inside of the tube can be processed properly, and not leak into your bloodstream. This is how food intolerances can occur. 02.01.2022 I love to build a colourful bowl of goodness for lunch, starting with a wholegrain such as quinoa or brown rice. Then add 1/2 cup of pre-soaked and properly cooked legumes (chickpeas, cannelini, black beans or kidney beans are my favourite) tossed in extra virgin olive oil, lemon juice and crushed garlic, 1 pre-cooked and cooled potato (baked in olive oil is yummy!) or 1/2 cup pre-roasted pumpkin, 1/4 cup each of raw broccoli, carrot, cos lettuce and spring onions. I add a ha...ndful of cashews or almonds and pepitas. I make a Green Dressing of pureed avocado, lemon juice and zest, garlic and olive oil and drizzle all over the top - liberally! Sprouts and fresh herbs also keep it interesting... I can prepare this for a few days of work and school lunches, saving money and the temptation of buying something less healthy. And definitely far more delicious! I calculated the fibre content of this meal at 15g of fibre using professional nutrition software Foodzone. Well on my (and my kids) way to our total daily fibre requirement - not to mention all those colourful foods phytonutrient content! Winning!
