21.01.2022 Results Karen Fordham has absolutely smashed her 9 week goal of losing the unwanted bodyfat and massively increasing her fitness level before she moves to Sydney. After setting some SMART goals with her to turn her lifestyle around, she has become so much more motivated and inspired to keep on setting goals in other respects of her life.... 17.01.2022 Recipe of the week One Pot Lemon Orzo Shrimp/Prawns Serves: 4 Total Time: 40 mins... INGREDIENTS: 500g medium shrimp, peeled and deveined Kosher salt and freshly ground black pepper, to taste 1 tablespoon olive oil 3 cloves garlic, minced 1 onion, diced 1/2 teaspoon dried oregano 250g orzo pasta 2 cups chicken broth 1 can diced tomatoes 1/2 cup frozen peas Juice of 1 lemon 1/4 cup grated Parmesan cheese INSTRUCTIONS 1. Preheat oven to 400 degrees F. 2. Season shrimp/prawns with salt and pepper, to taste; set aside. 3. Heat olive oil in a large oven-proof skillet over medium high heat. Add garlic, onion and oregano, and cook, stirring often, until onions have become translucent, about 3-4 minutes. Stir in orzo until lightly browned, about 1-2 minutes. 4. Stir in chicken broth and 1/2 cup water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 10-12 minutes. Stir in tomatoes, peas, lemon juice and shrimp. Sprinkle with Parmesan. 5. Place into oven and bake until shrimp are cooked through, about 12-14 minutes. 6. Serve immediately. 04.01.2022 Recipe of the week Brussels Sprouts with Bacon & Garlic Serves: 12... Total Time: 30 mins INGREDIENTS: 1/2kg fresh Brussels sprouts 8 lean bacon strips, coarsely chopped 3 garlic cloves, minced 3/4 cup chicken broth 1/2 teaspoon salt 1/4 teaspoon pepper INSTRUCTIONS 1. Trim Brussels sprouts. Cut sprouts lengthwise in half; cut crosswise into thin slices. In a stockpot, cook bacon over medium heat until crisp, stirring occasionally. Add garlic; cook 30 seconds longer. Remove with a slotted spoon; drain on paper towels. 2. Add Brussels sprouts to bacon drippings; cook and stir until sprouts begin to brown lightly, 4-6 minutes. Stir in broth, salt and pepper; cook, covered, until Brussels sprouts are tender, 4-6 minutes longer. Stir in bacon mixture.
