15.01.2022 ~ enrich your life with the 4 Cs Chai Coco Crunch Cookies ~ crunchy and flavoursome, these cookies are perfect on the go, healthy snacking or hey, why not yummy treat INGREDIENTS... 2 eggs 1/4 c coconut oil 1/3 c coconut sugar 4 tbs Chai Addict Concentrate 1/2 c coconut flour 1/2 c almond meal 1/2 tsp baking powder 1 tbs cacao nibs 1/4 c cashews, roughly chopped 1/4 c shredded coconut METHOD Preheat oven to 180C fan forced. Whisk together the eggs, coconut oil, coconut sugar and chai concentrate in a large mixing bowl. Combine the coconut flour, almond meal, baking powder, cacao nibs, cashews and shredded coconut in a seperate bowl. Add the dry ingredients into the wet and fold together until combined. It may help to use your hands! Portion the batter into 1 heaped tbsp cookies and press down to flatten on to a tray lined with baking paper. Bake for about 20 minutes, or until the cookies start to become golden. 11.01.2022 ~ chai peanut butter banana bread ~ simple, yet moist banana bread you need to be baking on the reg. deliciously and lovingly made by @enrichnutrition because chai makes everything better served with extra peanut butter highly recommended VEGAN, DF, GF & RSF... INGREDIENTS 1 c mashed bananas 1/4 c olive oil 1/4 c maple syrup 1/2 c chai addict chai concentrate (or sub 1/2 c almond milk + an extra tsp cinnamon and 1 tsp mixed spice) 1/2 c smooth peanut butter ( I used dark roast for an extra peanutty taste!) 1.5 c self-raising gluten free flour (I used White Wings) 1/8 tsp salt 1 tsp cinnamon 1/4 c roasted peanuts + extra to decorate 1/4 banana to decorate METHOD Preheat oven to 180 degrees celsius fan forced. Add all wet ingredients into a large mixing bowl. Combine the flour, salt and cinnamon in a medium mixing bowl. Add the dry ingredients into the wet and stir to combine. Fold through the peanuts and spoon into a loaf tin. Add extra peanuts and banana on top of desired. Bake for about 50 minutes, or until a skewer comes out dry when inserted. 10.01.2022 | billie morris art | supporting and collaborating with local businesses have always been my jam. from the very beginning I knew that I wanted a label that showcased art by a melbourne artist...and Billie Morris is her name. we actually studied together briefly before we started our own businesses - i went off to do chai and she continued on her art. 4 years later, the stars aligned and here we are working alongside together again. here she explains her queues and inspiration... for this piece. In creating this label, we originally discussed encapsulating the famous Melbourne coffee scene. The trends, the aesthetic, the community. After playing with different layouts and content we found the more we simplified the design the stronger it became, and ultimately the message changed slightly as well. Where we used to revel in the freedom to congregate in a flow of busy people through cafes, shops and markets we are now limited - but the intention is still there - to appreciate what we have, a moment of simple pleasure, with a friend or with yourself. I was inspired by bold body shapes by artists like Matisse and Henri Laurens - signifying strength and assuredness but also representing our fragility. And as Chloe mentioned, the warm tones and elegant lines compliment the flavour profiles.
