21.01.2022 Chaîne Brisbane's third Virtual Mondial Event "Discover McLaren Vale" with guest winemaker Brad Hickey (Brash Higgins), was held on June 10th. Conversation flowed, and Brad graciously remained until stumps. Members brought a range of reds, with a smattering of whites and stickies. Awesome to see Bailli Honoraire Augustine in attendance. One member blitzing a glass of red in the blender to aerate it provided a memorable moment

19.01.2022 Snaps from last night’s most enjoyable 4th Virtual Mondial - The Story of Whisky with guest presenter, National Ambassadorial Program Manager, Mark Hickey from Spirits Platform. Mark led us on an informative and humorous journey through the history of whisky, discussing the various flavour profiles along the way. With over 25 years in the industry, Mark is currently working with the Edinburgh Whisky Academy, and has won the Icons of Whisky Awards title of World Whisky Ambassador of the Year for two years running. Mark chose five whiskies to illustrate the story: Writers Tears Copper Pot, Bruichladdich Classic Laddie, Highland Park Twisted Tattoo 16yo, Port Charlotte Islay Barley 2011, and Octomore 10.4 Thanks Mark! Looking forward to developing the idea of a group trip to Scotland with you.

18.01.2022 What to do when the nation’s Bailli Délégué and his good lady wife, the Bailli of South Australia, fly in for a sneaky Wednesday night dinner? The things that happen when your state and theirs keep their borders open to each other, and a you have a fab venue operating under a ‘COVID-19 Safety Plan’ Hey presto: a glorious dinner in the cellar of The Brisbane Club! Executive Chef Caleb Bilewicz and his team weaved magic, complete with smoke and edible gold. We were well spoilt.

15.01.2022 World Chaîne Day event no. 2 exemplifying its themes of home cooking and celebration. Virtual lunch with special guests from the Lotus Foundation Orphanage in Mongolia. Vice Conseiller Culinaire Paul Wilderbeek and family volunteer every year, and have turned out fabulous bakers.
14.01.2022 We had a full house for our Dîner Amical. Josue and Krystal put together an amazing menu that respected the traditions of Día de los Muertos while showcasing their approach to the Art of the Table.

The 5-bottle pack will be bundled with samples of barley to heighten the full sensory experience of "The Story of Whisky". Each pack is designed for one person to enjoy. The Committee will deliver the packs to members upon payment, prior to the event.
13.01.2022 Josh and Krystal Lopez’s The Wolfe hosted Chaîne Brisbane’s Mondial night of the magnums event last week. A delicious array of champagnes, whites and reds were presented and described by those who brought them, and enjoyed by all. Chef Josh crafted a menu that perfectly matched the wines. Dining in the heated, sheltered courtyard, we were able to safely comply with then current social distancing guidelines. Thanks again J&K for a fab night!

10.01.2022 Sound the drums!: it’s truffle season in Australia, and the Brisbane Club showcased them at their finest. Appropriately socially-distanced, a small group relished the multi course delights prepared by Executive Chef Caleb Bilewicz and team. Thanks guys!

07.01.2022 Just like being back in our high school chemistry class! Chaîne Brisbane spent a highly educative night making our own gins from the extensive flavour wall at The Brisbane Distillery Company in West End. A tremendous turnout by members for a mid-week Mondial event! Four to five flavours of choice were combined with a fixative, added to a ‘teabag’, and distilled in our individual stills sitting on hot plates. When cooled, we chose to colour our gins with blue butterfly pea fl...ower tea (to turn our G&Ts pink when the tonic is added), or a red additive (or neither). Next, we poured our concoctions into a clear, or a dangerous-looking black, gin bottle to take home. Many thanks to our engaging hosts for a riotous time, guaranteed by the four gin cocktails and tasty charcuterie plate. Extra snaps to The BDC for making hand sanitizer at the outbreak of COVID, and for supplying electricity to the Grid via its solar power Tesla battery.
