24.01.2022 Look at that colour! 1996 vintage, Fleur de Passion from @champagnedieboltvallois I'm a huge fan of this house's standard BdB 100% Cramant as an excellent sub $100 #champagne but the Fleur de Passion is even more rich and defined. As you know 1996 was a terrible vintage @onceuponawine_ remember how we had their standard NV as part of that BdB vertical at @devinefoodandwine a while back?

21.01.2022 When you stumble across a 10-20yo bottle of NV at your local wine store complete with glasses and signature wooden box for the same price as a new bottle. What will it taste like? I'm saving this for Bastille day where we will compare it against a newer bottle of NV. This is one of the few houses (together with @champagnelanson and a few others) who's NV does not undergo malolactic fermentation. What is this 'Malo'? Google it, but essentially you'll get a stronger more focuse...d acidic taste due to the higher proportions of malic acid that are present in the finished wine. For most NV's, this malic acid is intentionally converted into a softer lactic acid during vinification, resulting in a less astringent tang and an easier drinking style for the general public. Vintages releases are typically 'non-malolactic' too which means they can be a little unapproachable in their youth if you drink them too soon. As the vintage wine ages, this malic acid is naturally broken down into softer acids, essentially doing the same thing to the end taste as the malolactic fermentation phase does. See more

11.01.2022 Do you like #Champagne that tastes like a lightly toasted sourdough piece of toast with a thin layer of rich butter and fragrant honey on top mixed with a mineral driven tart apple glaze? If you do, buy this bottle of @champagne_dumenil So great to try something that tastes different to what I usually drink. It's becoming difficult to be surprised these days! I think this is the 600th or more brand I've tried.

01.01.2022 Rosé or white? This dry rosé #Champagne by #polroger went perfectly with a strawberry cream dessert. I would never thought of pairing them together, but it worked. What strange food Champagne combinations have you tried that have been delicious? I still want to try fried chicken dunked in caviar with a glass of #Krug
